Ingredients

Chocolate Mixture

  • 1 cup dark chocolate
  • 1 tbsp coconut oil
  • 2 tbsp peanut butter
  • 3 tbsp quinoa crisps

Peanut Butter Filling

  • 1/3 cup peanut butter
  • 1 tbsp maple syrup
  • 1 tbsp coconut flour

Instructions

  1. Melt Chocolate: Add the dark chocolate and coconut oil to a medium bowl and microwave in 30-second increments, stirring well between each until the chocolate is fully melted and smooth.
  2. Mix Chocolate Mixture: Stir in 2 tablespoons of peanut butter and quinoa crisps into the melted chocolate, then set this mixture aside to prepare the filling.
  3. Prepare Peanut Butter Filling: In a small bowl, thoroughly combine 1/3 cup peanut butter with 1 tablespoon maple syrup.
  4. Thicken Filling: Gently fold in 1 tablespoon coconut flour into the peanut butter mixture until it thickens sufficiently to be shaped.
  5. Layer Chocolate Base: Spoon about half a tablespoon of the chocolate mixture into each silicone cupcake liner to create a base layer.
  6. Add Peanut Butter Center: Roll 1 teaspoon of the peanut butter filling into a small ball, flatten it slightly, and place it carefully in the center of the chocolate base, making sure it doesn't touch the sides.
  7. Top with Chocolate: Cover the peanut butter filling completely with more chocolate mixture, ensuring it is fully enclosed to seal in the filling.
  8. Freeze to Set: Place the silicone liners with the cups in the freezer for 15-20 minutes or until the cups are fully firm and set.
  9. Serve: Carefully remove the peanut butter cups from the liners and enjoy this crunchy and chocolatey treat.

Notes

  • Use silicone cupcake liners for easy removal and no sticking.
  • The quinoa crisps add a delightful crunch but can be omitted if unavailable.
  • Store the peanut butter cups in an airtight container in the freezer to keep them firm.
  • For a sweeter option, increase maple syrup slightly in the peanut butter filling.
  • Be careful not to overheat the chocolate in the microwave to prevent burning.
