Ingredients

Beef and Marinade

  • 1 lb boneless round beef (chuck steak, flat iron, or flank steak), cut into thin 3-inch strips
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Vegetables

  • 4 cloves garlic, minced
  • 3-4 cups broccoli florets
  • 1 small onion, cut into strips
  • 1/2 bell pepper, cut into strips
  • 1/2 cup mushrooms, sliced (optional)

Sauce

  • 1/3 cup reduced sodium soy sauce
  • 1/3 cup water
  • 1 tablespoon brown sugar or honey
  • 1 teaspoon fresh ginger, grated or minced
  • 1 teaspoon cornstarch

Others

  • 1 tablespoon olive oil (or vegetable or sesame oil)
  • Hot cooked rice or noodles for serving

Instructions

  1. Marinate the Beef: In a large bowl, combine the cornstarch and water until smooth. Add the beef strips and mix thoroughly until fully coated. Set aside for 2 minutes to allow the marinade to take effect.
  2. Cook the Beef: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the marinated beef and stir-fry for 3 to 5 minutes, or until the beef is no longer pink. Remove the cooked beef from the pan and set it aside.
  3. Stir-fry the Vegetables: In the same skillet, using the remaining oil, stir-fry the minced garlic, broccoli florets, onion strips, bell pepper strips, and optional mushrooms for 3 to 5 minutes, until the vegetables are tender-crisp but still vibrant.
  4. Prepare and Add the Sauce: In a small bowl, whisk together the soy sauce, water, brown sugar or honey, grated ginger, and cornstarch until smooth. Pour this sauce mixture into the skillet with the vegetables. Return the cooked beef to the pan, then stir-fry everything together for 2 to 3 minutes until the sauce has thickened slightly and all ingredients are well coated.
  5. Serve: Serve the hot beef and broccoli stir-fry over cooked rice or noodles. Enjoy your quick, flavorful meal!

Notes

  • For a gluten-free option, substitute soy sauce with tamari or coconut aminos.
  • Feel free to add other vegetables like snap peas or carrots for extra color and nutrition.
  • Adjust the sweetness by increasing or decreasing the brown sugar or honey in the sauce.
  • If using honey, add it after removing the pan from heat to preserve its nutrients.
  • For more intense flavor, marinate the beef for up to 30 minutes before cooking.
