Pumpkin Delight is a creamy, layered dessert featuring a buttery pecan crust, smooth cream cheese filling, and a luscious pumpkin pudding layer topped with whipped topping and pecans. Perfect for fall gatherings or festive occasions, this no-bake pumpkin treat combines classic flavors with a delightful texture contrast.

Ingredients

Crust

  • 1 cup all-purpose flour
  • ½ cup butter, softened
  • ¾ cup chopped pecans

Cream Cheese Layer

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (from the total 3 cups)

Pumpkin Pudding Layer

  • 2½ cups milk
  • 3 (3.4-ounce) packages white chocolate or vanilla instant pudding mix
  • 1 (15-ounce) can pumpkin puree
  • 1 teaspoon pumpkin spice
  • 1 cup whipped topping (from the total 3 cups)

Topping

  • 1 cup whipped topping (remaining from the total 3 cups)
  • ¼ cup chopped pecans (reserved from total ¾ cup)

Instructions

  1. Prepare the crust: Mix the flour, softened butter, and ½ cup chopped pecans together until combined. Press the mixture evenly into a greased 9x9-inch baking pan.
  2. Bake the crust: Bake the crust in a preheated 350°F oven for 15 minutes. Once baked, remove from the oven and allow it to cool completely at room temperature. If using a 9x13 pan or desiring a thicker crust, increase the flour by ½ cup, butter by ¼ cup, and pecans by ¼ cup accordingly.
  3. Prepare the cream cheese layer: In a bowl, beat the softened cream cheese and powdered sugar together until smooth. Fold in 1 cup of the whipped topping gently. Spread this creamy mixture evenly over the cooled crust layer.
  4. Make the pumpkin pudding layer: In a separate mixing bowl, combine the milk, instant pudding mix, pumpkin puree, and pumpkin spice. Whisk together until smooth and well blended. Then fold in 1 cup of the whipped topping. Spread this pumpkin pudding mixture evenly over the cream cheese layer.
  5. Add the topping: Spread the remaining 1 cup of whipped topping evenly over the pumpkin pudding layer. Sprinkle the reserved ¼ cup chopped pecans evenly on top for extra crunch and garnish.
  6. Chill and serve: Refrigerate the assembled dessert for at least 3 hours or until fully set. Serve chilled and enjoy this festive pumpkin delight.

Notes

  • If using a 9x13-inch pan or wanting a thicker crust, add an extra ½ cup flour, ¼ cup butter, and ¼ cup chopped pecans to the crust ingredients.
  • Allow the crust to cool completely before adding the cream cheese and pudding layers to prevent melting.
  • You can substitute whipped topping with homemade whipped cream if preferred.
  • This dessert can be prepared a day in advance and stored covered in the refrigerator.
