Delight in these easy-to-make Pretzel Snap Ice Cream Sandwich Bites, combining crunchy pretzel snaps with creamy ice cream, then dipped in rich chocolate and garnished with colorful sprinkles and nuts. Perfect for a refreshing, bite-sized dessert that's both fun and satisfying.

Ingredients

Base

  • 48 pretzel snaps
  • 1 pint ice cream, any flavor

Chocolate Coating

  • 5 cups semisweet chocolate chips
  • 2 teaspoons coconut oil (divided)

Garnishes

  • Sprinkles, for garnishing
  • Chopped peanuts, for garnishing
  • Pistachios, for garnishing

Instructions

  1. Prepare the base: Lay out half of the pretzel snaps evenly on a parchment-lined sheet pan, forming the bottom layer of the ice cream sandwiches.
  2. Assemble the sandwiches: Top each pretzel snap with a heaping tablespoon of your chosen ice cream, then cover with another pretzel snap, pressing down gently to secure the ice cream between the pretzels.
  3. Freeze the assembled bites: Place the sheet pan with the assembled bites into the freezer for at least 1 hour or until the ice cream is firm and the sandwiches hold together.
  4. Melt the chocolate: Before removing the bites from the freezer, combine the semisweet chocolate chips with 1 teaspoon of coconut oil in a microwave-safe bowl. Melt the mixture on medium power in 30-second intervals, stirring well between each, until the chocolate is smooth and fully melted.
  5. Dip and garnish: Remove the frozen sandwich bites from the freezer. Dip half of each bite into the melted chocolate, tapping off excess, then place them back onto the sheet pan. Immediately garnish the chocolate-coated half with your choice of sprinkles, chopped peanuts, or pistachios for added texture and flavor.
  6. Set the chocolate: Return the sheet pan to the freezer and chill the bites until the chocolate coating is fully set, about 30 minutes.
  7. Serve and store: Serve the ice cream sandwich bites frozen for optimal taste and texture. Store any leftovers in a freezer-safe airtight container for up to 1 month.

Notes

  • Use any ice cream flavor you love to customize the bites.
  • For easy dipping, ensure the ice cream sandwiches are very firm before dipping in chocolate.
  • Chill the chocolate bites quickly by freezing to maintain the crispness of the pretzels.
  • Store in airtight containers to prevent freezer burn and maintain freshness.
  • Optional garnishes add a fun and flavorful touch—feel free to mix and match.
