This Pizza Grilled Cheese recipe combines the best of two comfort foods—pizza and grilled cheese—into a deliciously gooey sandwich loaded with mozzarella, pepperoni, and Italian-seasoned buttery bread, perfect for a quick and satisfying meal for the whole family.

Ingredients

Butter Mixture

  • ½ cup unsalted butter (very soft)
  • 1 tablespoon grated parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon dried Italian seasoning

Sandwich

  • 8 slices white bread
  • 12 slices mozzarella cheese
  • 6 ounces pepperoni
  • Warm pizza sauce (for dipping)

Instructions

  1. Prepare the butter mixture: In a medium-sized bowl, combine the very soft unsalted butter with grated parmesan cheese, garlic powder, and dried Italian seasoning. Mix thoroughly until the mixture is smooth and well combined.
  2. Butter the bread: Evenly spread the prepared butter mixture over one side of each slice of bread. Arrange the bread slices butter side up on a sheet tray and set aside until ready to use.
  3. Assemble the sandwich in the skillet: Over medium-low heat, heat a skillet. Place one slice of bread butter side down in the skillet. Start layering on top: one slice of mozzarella cheese, followed by 6 pepperoni slices, then another slice of mozzarella, 6 more pepperoni slices, and a final slice of mozzarella cheese.
  4. Add the top bread slice: Cover the sandwich with another slice of bread, butter side up. Note that you may have some leftover pepperoni.
  5. Cook and melt the cheese: Place a lid on the skillet to help melt the cheese and cook until the bottom slice of bread turns golden brown, about 3-5 minutes. Carefully flip the sandwich using a spatula. Place the lid back on and continue cooking until the other side is golden brown and the cheese is melted, approximately another 3-5 minutes. Repeat this process with the remaining sandwiches.
  6. Serve: Serve the pizza grilled cheese sandwiches hot with warm pizza sauce on the side for dipping and enjoy a comforting, cheesy treat.

Notes

  • Use medium-low heat to ensure the bread browns slowly, preventing burning while melting the cheese thoroughly.
  • If you prefer a spicier sandwich, add some crushed red pepper flakes to the butter mixture.
  • Leftover pepperoni can be saved for another use or added to salads or omelets.
  • Using fresh mozzarella can add a creamier texture to the sandwich.
  • Adjust the quantity of pepperoni per sandwich based on your preference or dietary needs.
