This Pink Sauce Pasta is a creamy, flavorful dish combining the richness of tomato passata, heavy cream, and mozzarella cheese with a touch of spice from red chili flakes. Perfect for a quick and comforting weeknight meal, this recipe yields a luscious pasta coated in a velvety pink sauce infused with garlic, onion, and fragrant herbs.

Ingredients

Pasta

  • 300 g pasta of choice (penne recommended)

Sauce

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small red onion, minced
  • 4 garlic cloves, minced
  • 1.5 cups tomato passata (or puree or sauce, not tomato paste)
  • 1 tsp dried basil
  • 1 chicken bouillon cube, crumbled
  • pinch sugar
  • sprinkle of red chili flakes
  • salt and pepper to taste
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1/3 to 1/2 cup shredded mozzarella cheese

Instructions

  1. Cook Pasta: Cook the pasta to al dente according to the package instructions. Once cooked, drain the pasta while reserving some of the pasta water for later use in adjusting the sauce consistency.
  2. Sauté Aromatics: Heat a large skillet over medium heat and add the butter and olive oil. Once the butter has melted, add the minced red onion and cook for 4 to 5 minutes until softened. Then add the minced garlic and sauté for another minute to release its aroma.
  3. Prepare Sauce: Add the tomato passata, dried basil, crumbled chicken bouillon cube, a pinch of sugar, red chili flakes, and salt and pepper to taste into the skillet with the aromatics. Let the mixture simmer gently for a few minutes to meld the flavors together. Then stir in the heavy cream, milk, and shredded mozzarella cheese until the cheese melts and the sauce turns creamy and pink.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss well to combine, ensuring the pasta is evenly coated with the pink sauce. Warm through for a few minutes. If the sauce is too thick, add a splash of the reserved pasta water to loosen it. Serve immediately for the best taste and texture.

Notes

  • Use pasta water to adjust sauce thickness for a glossy finish.
  • Chicken bouillon cube adds umami but can be substituted with vegetable bouillon for a vegetarian version.
  • Adjust red chili flakes according to your heat preference.
  • For a richer sauce, use full-fat heavy cream.
  • Cook pasta al dente to ensure the best texture when combined with the sauce.
