These Pear Gingerbread Parfaits are a quick and delicious treat combining creamy Greek yogurt, warm spices, tender pear cubes, and crunchy gingerbread cookies. Perfect for a festive breakfast or a light dessert, they capture the cozy flavors of gingerbread spiced with cinnamon, ginger, cloves, and vanilla, layered beautifully for a delightful texture contrast.

Ingredients

Yogurt Mixture

  • 400 g (1 1/2 cups) plain Greek yogurt (divided)
  • 3 tsp maple syrup
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/8 tsp vanilla extract

Other Ingredients

  • 135 g (handful) gingerbread men cookies
  • 1 ripe pear
  • Mini gingerbread men cookies (for decoration)

Instructions

  1. Prepare the yogurt mixture: In a bowl, combine the Greek yogurt with maple syrup, ground cinnamon, ground ginger, ground cloves, and vanilla extract. Mix thoroughly until all spices and syrup are evenly incorporated.
  2. Crush the gingerbread cookies: Lightly bash the gingerbread men cookies into rough chunks, ensuring some texture remains for layering.
  3. Prepare the pear: Peel the pear carefully and cut the flesh into small, bite-sized cubes suitable for layering in the parfaits.
  4. Assemble the parfaits: In serving glasses, add half of the crushed gingerbread cookies as the base layer. Then, add half of the spiced yogurt mixture. Follow with all the pear cubes layered evenly. Next, add the remaining yogurt mixture, then top off with the remaining crushed gingerbread cookies. Decorate the top with mini gingerbread men cookies and a light dusting of cinnamon for a festive finish.

Notes

  • You can substitute maple syrup with honey or agave syrup if preferred.
  • For a vegan option, use plant-based yogurt and ensure gingerbread cookies are vegan-friendly.
  • Adjust spice levels to taste, especially the ground cloves which can be potent.
  • These parfaits are best served immediately to enjoy the crisp texture of the cookies; however, they can be refrigerated for up to 4 hours.
  • Use ripe but firm pears to maintain pleasant texture in the parfait.
