Peanut Butter Yogurt Bites are delicious frozen treats combining creamy Greek yogurt and peanut butter, coated in rich dark chocolate and topped with crunchy salted peanuts. These protein-packed bites are quick to prepare and perfect for a sweet, healthy snack.

Ingredients

Yogurt Mixture

  • 1 cup plain Greek yogurt
  • ⅓ cup natural peanut butter

Chocolate Coating

  • 6 oz dark chocolate chips
  • Optional: 1 teaspoon coconut oil (for melting)

Topping

  • ¼ cup salted peanuts, chopped

Optional Sweetener

  • Maple syrup, to taste (optional)

Instructions

  1. Mix Yogurt and Peanut Butter: In a large bowl, combine the plain Greek yogurt and natural peanut butter until you get a smooth, creamy consistency. If you prefer a sweeter treat, add a drizzle of maple syrup and mix well.
  2. Form Bites: Using a cookie scoop or a pastry bag, portion out small rounds of the yogurt mixture onto a parchment-lined baking sheet. Gently smooth each round with the back of a spoon to create thin, even circles.
  3. Freeze the Bites: Place the baking sheet in the freezer for about 30 minutes to firm up the yogurt clusters, which will make dipping easier and prevent melting.
  4. Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 15 to 30-second increments, stirring in between to avoid seizing. To achieve a silky texture, stir in a teaspoon of coconut oil if desired.
  5. Dip the Frozen Bites: Remove the firm yogurt bites from the freezer and dip each one into the melted chocolate. Use a fork to lift them out and let the excess chocolate drip off before placing them back onto the parchment-lined baking sheet.
  6. Add Toppings: Sprinkle the dipped bites with chopped salted peanuts or a pinch of flaky sea salt for added flavor and crunch.
  7. Freeze to Set: Return the chocolate-coated bites to the freezer for at least 1 to 2 hours until the chocolate has fully hardened.
  8. Store and Enjoy: Keep the bites stored in an airtight container or freezer bag in the freezer. Enjoy them as a healthy and refreshing snack anytime!

Notes

  • You can adjust sweetness by adding maple syrup or honey to the yogurt mixture before freezing.
  • Use natural peanut butter without added sugar for a healthier option.
  • For a different topping, try chopped nuts like almonds or walnuts.
  • If coconut oil is unavailable, you can melt the chocolate without it, but stirring often is important to avoid burns.
  • Store the bites in the freezer to maintain their shape and texture.
