These Peanut Butter Rice Krispie Treats are a delightful twist on the classic marshmallow cereal bars, combining the creamy richness of peanut butter with crispy Rice Krispies and a luscious chocolate drizzle. Perfectly gooey, crunchy, and sweet, these treats are easy to make and ideal for sharing or snacking.

Ingredients

Main Ingredients

  • 1/4 cup unsalted butter
  • 1 (10 oz) bag mini marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispie cereal

Chocolate Topping

  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Prepare the Pan: Lightly grease a 9x13 inch pan with butter or non-stick cooking spray to ensure the treats don’t stick.
  2. Melt Ingredients: In a large saucepan over low heat, melt together the butter, mini marshmallows, and peanut butter, stirring gently until smooth and fully combined.
  3. Mix in Cereal: Remove the saucepan from heat and immediately stir in the Rice Krispie cereal until well coated with the marshmallow mixture.
  4. Form the Base: Press the mixture firmly into the prepared pan. To avoid sticking, lightly spray your hands with non-stick cooking spray while pressing.
  5. Melt the Chocolate: Place the chocolate chips in a medium heatproof bowl and microwave in 45-second intervals on medium power, stirring between each interval until almost melted and smooth.
  6. Add Oil and Mix: Stir in the vegetable oil into the melted chocolate for a glossy finish and better drizzle consistency.
  7. Top the Bars: Pour the melted chocolate evenly over the Rice Krispie base and allow it to harden at room temperature, about 2 hours.
  8. Serve and Store: Once set, cut into 18 squares and store in an airtight container at room temperature for freshness.

Notes

  • Lightly greasing your hands or using non-stick spray makes pressing the mixture easier and prevents sticking.
  • Use medium microwave power to melt chocolate to avoid burning or seizing.
  • You can substitute peanut butter with almond or sunflower butter for variations.
  • Store these treats at room temperature to maintain their chewy texture; refrigeration may harden them.
  • Ensure the chocolate topping fully cools and hardens before cutting to get clean squares.
