Delicious and easy-to-make Peanut Butter Chocolate Oat Cups featuring a crunchy oat base, creamy peanut butter middle layer, and rich dark chocolate topping. These no-bake treats are perfect for a quick snack or dessert and can be customized with gluten-free oats or nut butter of your choice.

Ingredients

For the base

  • 70g rolled oats (use gluten-free if necessary)
  • 2 tbsp smooth peanut butter or nut butter of choice
  • 2 tbsp maple syrup
  • Pinch of salt

For the peanut butter layer

  • 100g smooth peanut butter
  • 1 tbsp maple syrup

For the chocolate topping

  • 70g dark chocolate, melted
  • Optional drizzle of melted Biscoff spread

Instructions

  1. Prepare the base: In a bowl, combine the rolled oats, smooth peanut butter, maple syrup, and a pinch of salt. Mix well until all ingredients are fully incorporated. Then, evenly press the mixture into a 6-cup silicon muffin tray to form the base of each cup.
  2. Freeze the base: Place the silicon muffin tray in the freezer for 15 minutes to help the base firm up and set properly for layering.
  3. Make the peanut butter layer: While the base is freezing, mix smooth peanut butter and maple syrup in a small bowl until smooth and creamy. Once the base has set, spread this peanut butter mixture evenly over each oat base in the tray.
  4. Add the chocolate topping: Pour the melted dark chocolate over the peanut butter layer to cover it completely. If desired, drizzle melted Biscoff spread on top for extra flavor and decoration.
  5. Refrigerate to set: Place the prepared cups in the refrigerator and chill until the chocolate topping hardens completely, ensuring each cup holds its shape.
  6. Serve and enjoy: Once set, remove the peanut butter chocolate oat cups from the silicone tray and enjoy as a delicious snack or dessert.

Notes

  • Use gluten-free rolled oats to make these cups gluten-free.
  • Substitute peanut butter with any other nut or seed butter if preferred.
  • Store the cups in an airtight container in the refrigerator for up to 5 days.
  • The optional Biscoff drizzle adds a caramel-like flavor but can be omitted.
  • You can adjust the sweetness by varying the amount of maple syrup used.
  • Ensure the chocolate is fully melted and smooth before pouring for an even topping.
