A refreshing and elegant Bellini cocktail made with ripe peaches, peach puree, and chilled prosecco, garnished with peach slices and fresh mint. Perfect for a light and fruity drink to start any celebration or brunch.

Ingredients

For the Peach Puree

  • 1½ pounds ripe peaches (about 4, peeled, pitted, and sliced)
  • 2 ounces peach puree (prepared from the peaches)

For the Cocktail

  • 4 ounces chilled prosecco
  • Peach slices (for garnish)
  • Fresh mint (for garnish)

Instructions

  1. Make the peach puree: Place the peeled, pitted, and sliced peaches into a blender. Blend until the peaches become smooth and creamy, forming a fresh peach puree.
  2. Prepare the cocktail: Pour 2 ounces (¼ cup) of the fresh peach puree into a champagne flute. Carefully top it off with 4 ounces of chilled prosecco. Stir gently to combine the ingredients without losing the prosecco’s bubbles.
  3. Garnish and serve: Garnish the Bellini with a peach slice and a sprig of fresh mint on the rim of the glass for a beautiful presentation. Serve immediately and enjoy.

Notes

  • Use ripe, juicy peaches for the best flavor and sweetness in the puree.
  • Chilling the prosecco beforehand ensures the cocktail is nicely cold and refreshing.
  • For a non-alcoholic version, substitute prosecco with sparkling white grape juice or soda water.
  • The peach puree can be made in advance and stored in the refrigerator for up to 2 days.
