This Peach and Ricotta Flatbread is a delightful combination of creamy ricotta cheese, sweet fresh peaches, and fragrant basil, all atop a warm, crispy flatbread. Finished with a drizzle of tangy balsamic glaze and a pinch of flaky sea salt, it makes for a quick and elegant snack or light meal.

Ingredients

Flatbread Base

  • 1 flatbread (roughly 5 x 10 inches)

Toppings

  • 1/2 cup whole milk ricotta cheese
  • 1 large fresh peach, chopped
  • Pinch of flaky sea salt
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon balsamic glaze

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the flatbread. A hot oven ensures a crispy crust.
  2. Assemble Flatbread: Spread the whole milk ricotta cheese evenly over the flatbread surface. Then, scatter the chopped fresh peach pieces evenly on top of the ricotta layer.
  3. Bake: Place the assembled flatbread on a baking sheet and bake in the preheated oven for 10 to 12 minutes, or until the crust turns a lovely golden brown and the ricotta is warmed through.
  4. Finish and Serve: Once baked, remove the flatbread from the oven. Garnish with chopped fresh basil leaves, sprinkle a pinch of flaky sea salt over the top, and drizzle with balsamic glaze for a perfect sweet-tangy finish.

Notes

  • Use ripe, juicy peaches for the best flavor and texture contrast.
  • Whole milk ricotta provides creaminess; you can substitute with part-skim ricotta for a lighter version.
  • Ensure the flatbread is about the size recommended to cook evenly and achieve the right crispiness.
  • For added texture, consider a light sprinkle of toasted nuts like almonds or pistachios.
  • Balsamic glaze can be replaced with a balsamic reduction or high-quality balsamic vinegar if glaze is not available.
