This vibrant Pea and Mint Soup is a quick and refreshing dish, perfect for spring or summer. Combining sweet peas and fresh mint, it's a bright soup that can be enjoyed warm or chilled, topped with a smooth swirl of crème fraîche for added creaminess and flavor.

Ingredients

Soup Ingredients

  • 1/2 onion (small/medium), diced
  • 1 tbsp butter
  • 2 1/2 cups peas (fresh or frozen, defrosted)
  • 1 1/2 cups chicken stock (or vegetable stock for vegetarian version)
  • 2 tbsp mint (roughly chopped)
  • Salt and pepper to taste

To Serve

  • 1 tbsp crème fraîche (approx)

Instructions

  1. Sauté Onion: Warm a pot or pan over medium heat and melt the butter. Add diced onion and cook, stirring occasionally, for about 3-4 minutes until softened and translucent, without browning.
  2. Cook Peas: Add peas to the pot and stir them in the butter. Pour in the stock, cover with a lid, and bring to a simmer. Cook frozen peas for approximately 2 minutes or fresh peas for 5-7 minutes until tender but still bright green.
  3. Blend Soup: Remove the pot from heat and add roughly chopped mint. Using a stick/hand blender or transferring to a blender, blend the mixture until smooth. Season with salt and pepper, about 1/8 tsp each or to taste.
  4. Serve: Serve the soup warm or allow it to cool and chill for a refreshing cold soup. Garnish each bowl with a swirl of crème fraîche for added richness.

Notes

  • Using vegetable stock makes this soup suitable for vegetarians.
  • Fresh peas provide a sweeter flavor, but frozen peas work well and save preparation time.
  • The crème fraîche garnish adds creaminess but can be omitted for a lighter soup.
  • For a vegan version, substitute butter with olive oil and skip the crème fraîche or use a plant-based alternative.
  • This soup can be stored in the refrigerator for up to 2 days and tastes great reheated or cold.
