This easy-to-make dish is seasoned with garlic, lemon zest, and a hint of cayenne for a subtle kick, making it a perfect weeknight dinner that feels special.

Ingredients

Fish and Topping

  • 20 ounces firm white fish (such as cod, haddock, or tilapia)
  • 2/3 cup panko breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 2 tablespoons butter, softened at room temperature
  • 1 clove garlic, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)

Finishing

  • 1 lemon, zested and juiced

Instructions

  1. Preheat and Prepare: Preheat your oven to 425°F (220°C). Line a baking sheet with foil and spray it lightly with cooking spray to prevent sticking. Place the fish fillets onto the prepared baking sheet, spacing them evenly.
  2. Make the Parmesan Crust: In a small bowl, combine the panko breadcrumbs, grated parmesan, softened butter, grated garlic, salt, pepper, and cayenne pepper if using. Mix thoroughly using a fork until all ingredients are well incorporated into a crumbly mixture.
  3. Apply the Crust: Gently press the breadcrumb and cheese mixture evenly on the top side of each fish fillet, forming a crust layer.
  4. Bake the Fish: Place the baking sheet in the preheated oven and bake the fish for about 20 minutes, or until the fish flakes easily when tested with a fork and the crust is golden and crisp.
  5. Finish with Lemon: Remove the fish from the oven and drizzle the fillets with fresh lemon juice before serving. Serve immediately to enjoy the crispy crust at its best.

Notes

  • You can substitute cod with haddock, tilapia, or any other firm white fish of your choice.
  • If you prefer a milder flavor, omit the cayenne pepper.
  • For extra crispiness, place the fish closer to the top rack in the oven.
  • Make sure the butter is at room temperature to mix easily with the breadcrumbs.
  • Serve with a side of steamed vegetables or a fresh salad for a complete meal.
