Ingredients

Base Ingredients

  • 6 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract

Additional Ingredients

  • 1/2 cup melted butter (divided for each muffin tin)
  • Fruit (for serving)
  • Syrup (for serving)
  • Powdered sugar (for serving)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to get it ready for baking the pancake poppers.
  2. Prepare the Batter: In a blender, combine the eggs, milk, flour, salt, and vanilla extract. Blend on high speed for 3-5 minutes to ensure the eggs are fully beaten and the batter is smooth and slightly aerated.
  3. Butter the Muffin Tin: Pour about 1/2 teaspoon of melted butter into the bottom of each muffin cavity to prevent sticking and add flavor.
  4. Fill and Bake: Pour the prepared batter evenly into each muffin hole. Place the tin in the oven and bake for 12 to 15 minutes until the sides of the pancakes puff up and turn golden brown.
  5. Serve with Toppings: Remove from oven and serve hot. Top with fresh fruit, syrup, and powdered sugar or your favorite pancake toppings for a delicious breakfast popper experience.

Notes

  • Be sure to blend the batter thoroughly for fluffy pancake poppers.
  • Use fresh or frozen fruit as a topping based on availability.
  • For added flavor, you can mix chocolate chips or blueberries into the batter before baking.
  • Adjust baking time slightly based on your oven’s performance to avoid over or under-baking.
  • These poppers work great for meal prep and can be refrigerated or frozen for later reheat.
