Perfect for a crowd or meal prep, it’s a filling breakfast dish that’s easy to prepare and bake, offering a delicious way to start your day with oats, peanut butter, and a touch of sweetness.

Ingredients

Dry Ingredients

  • 1 3/4 cups pancake mix (Kodiak Cakes preferred)
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt

Wet Ingredients

  • 2 eggs
  • 1/2 cup melted coconut oil (or neutral oil)
  • 1/2 cup maple syrup
  • 1/2 cup peanut butter
  • 1/2 cup almond milk
  • 1 tsp vanilla extract

Add-ins

  • 3/4 cup chocolate chips

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish thoroughly to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, combine the pancake mix, rolled oats, baking soda, cinnamon, and salt. Stir these together until evenly distributed.
  3. Combine Wet Ingredients: In a larger bowl, whisk the eggs, melted coconut oil, maple syrup, and peanut butter until smooth. Then add the almond milk and vanilla extract, mixing well to combine all the wet components.
  4. Incorporate Dry into Wet: Gradually add the dry ingredient mixture into the wet ingredients in increments, whisking continuously until the batter is smooth and well combined.
  5. Add Chocolate Chips: Fold in the chocolate chips evenly into the batter, making sure they are distributed throughout.
  6. Bake: Pour the batter into the greased baking dish and spread evenly. Bake for 30 to 32 minutes, or until a toothpick inserted into the center comes out clean. Once baked, allow it to cool completely before slicing.
  7. Serve: Cut the oatmeal bake into squares and serve warm as you would pancakes. Top with extra maple syrup, fresh berries, or additional peanut butter for extra flavor and enjoyment.

Notes

  • You can substitute coconut oil with any other neutral-flavored oil if preferred.
  • Ensure the baking dish is well greased to make serving easier and prevent sticking.
  • Letting the bake cool fully before cutting helps maintain clean slices.
  • For a vegan version, substitute eggs with flax eggs and use vegan pancake mix.
  • Optional add-ins like nuts or dried fruit can be included for extra texture and flavor.
