A simple and nutritious gluten-free, dairy-free overnight chia oats recipe that requires minimal preparation and delivers a creamy, delicious breakfast packed with fiber and protein. Perfect for busy mornings, this recipe uses rolled oats, chia seeds, and oat milk combined with vanilla and maple syrup for natural sweetness and flavor.

Ingredients

Overnight Chia Oats

  • 3 tablespoons chia seeds
  • 3/4 cup rolled oats
  • 1 1/4 – 1 1/2 cups oat milk or milk of choice
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • A big pinch of flaky sea salt
  • Cinnamon, to taste

Instructions

  1. Mix Ingredients: Combine the chia seeds, rolled oats, oat milk (using 1.25 cups for thicker consistency or 1.5 cups for milkier), vanilla extract, maple syrup, flaky sea salt, and cinnamon in a bowl. Stir well to ensure all ingredients are evenly distributed.
  2. Refrigerate: Transfer the mixture into a storage jar and place it in the refrigerator. Allow it to chill for a minimum of 4 hours, but ideally 12 hours or more to fully thicken and develop flavor. The prepared oats can be stored in the fridge for up to 4 to 5 days.
  3. Serve: When ready to eat, remove the jar from the fridge and spoon the chia oats into two bowls. Optionally, top with fresh or dried fruit of your choice, then serve immediately.

Notes

  • Adjust the amount of oat milk to achieve your preferred texture, using less milk for thicker oats and more for a creamier, milkier consistency.
  • This recipe is naturally gluten-free and dairy-free, making it suitable for those with related dietary restrictions.
  • Maple syrup can be replaced with honey or agave syrup to vary sweetness.
  • Optional toppings such as fresh berries, sliced banana, nuts, or seeds can add flavor and texture.
  • Make ahead and store in the fridge for a quick, grab-and-go breakfast.
