This Oreo Icebox Cake is a no-bake, creamy dessert featuring layers of whole Oreo cookies and lightly sweetened whipped cream, chilled until perfectly set. It’s a simple yet indulgent treat that comes together quickly and requires minimal ingredients, making it perfect for any occasion or a sweet summer refreshment.

Ingredients

Whipped Cream Mixture

  • 2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract

Oreo Cookies

  • 32 regular whole Oreo cookies (one 13.3 ounce / 377g package)
  • 3 Oreo cookies, crushed (for topping)

Instructions

  1. Prepare the Whipped Cream: In the bowl of a stand mixer fitted with a whisk attachment, pour in the heavy cream, powdered sugar, and vanilla extract. Beat the mixture on medium-high speed until it becomes fluffy and holds soft peaks, being careful not to overwhip to avoid turning it into butter.
  2. Layer the Cookies and Cream: In an 8-inch square pan, arrange a single layer of whole Oreo cookies evenly across the bottom. Spread half of the whipped cream mixture over the Oreos and gently smooth it out with a spatula to create an even layer. Repeat the process by adding another layer of whole Oreo cookies, followed by the remaining whipped cream layer.
  3. Add Crushed Oreo Topping and Chill: Sprinkle the crushed Oreo cookies evenly over the top whipped cream layer. Cover the pan tightly with plastic wrap and place it in the refrigerator. Allow the cake to chill for at least 4 hours, though overnight chilling will yield the best texture as the cookies soften and meld with the cream.
  4. Freeze for Clean Slices and Serve: Before serving, freeze the chilled cake for 30 minutes. This step firms up the cake, making it easier to slice beautifully without crumbling. Slice into squares and serve immediately for a cool, creamy dessert experience.

Notes

  • Use full-fat heavy whipping cream for best texture and flavor.
  • Chilling overnight enhances cookie softening and flavor melding.
  • Freezing briefly before slicing helps achieve clean, neat portions.
  • You can customize by adding layers of chocolate chips, peanut butter, or different flavored Oreos.
  • Store any leftovers covered in the fridge for up to 3 days.
