This One Pot Chicken and Broccoli Pasta is a quick, comforting meal perfect for busy weeknights. Tender chicken, nutritious broccoli, and perfectly cooked fusilli pasta come together in a creamy sauce made with chicken broth and half-and-half, all cooked in a single pot for minimal cleanup. The dish offers a flavorful blend of garlic, Italian seasoning, and a subtle kick from crushed red pepper flakes, finished with freshly grated Parmesan cheese.

Ingredients

Chicken & Seasonings

  • 2 chicken breasts (cut into bite-size strips/pieces)
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt & pepper (to taste)

Liquids & Pasta

  • 1.5 cups chicken broth
  • 2 cups half-and-half
  • 3 cups uncooked fusilli pasta

Vegetables & Garnish

  • 2 cups broccoli florets (cut small)
  • Freshly grated parmesan cheese (for serving, optional, to taste)

Instructions

  1. Sauté the chicken: Add the chicken pieces and olive oil to a Dutch oven or large soup pot. Stir to coat and cook over medium-high heat for 3 to 4 minutes until the chicken is lightly browned but not fully cooked through.
  2. Add seasonings and liquids: Stir in minced garlic, Italian seasoning, and crushed red pepper flakes. Pour in chicken broth and half-and-half, then add the uncooked fusilli pasta. Increase heat to high and bring to a gentle boil.
  3. Simmer the pasta: Reduce heat to medium or medium-low once boiling to maintain a gentle simmer. Let the mixture cook for about 8 minutes, stirring occasionally to prevent the pasta from sticking to the pot.
  4. Cook the broccoli: Add the broccoli florets to the pot, reduce heat to medium-low, cover, and cook for an additional 4 to 5 minutes until the broccoli is tender but still crisp. If needed, cook a couple more minutes for preferred tenderness.
  5. Season and serve: Season the dish generously with salt and pepper. Serve immediately topped with freshly grated Parmesan cheese, if desired.

Notes

  • For a spicier kick, increase the crushed red pepper flakes amount to your preference.
  • You can substitute half-and-half with heavy cream for a richer sauce or milk for a lighter version.
  • Feel free to swap fusilli with other pasta shapes like penne or rotini.
  • Use low-sodium chicken broth to control sodium levels.
  • This recipe is easily doubled for larger gatherings by using a bigger pot.
