This One Pan Chicken Parmesan Pasta is a quick and easy weeknight dinner combining tender chicken, rigatoni pasta, marinara sauce, and melted cheeses all cooked together in a single skillet. Ready in just 30 minutes, it's a comforting, cheesy dish with bright basil garnish, minimizing cleanup without sacrificing flavor.

Ingredients

Chicken

  • 3 boneless, skinless chicken breasts, cut into cubes
  • 2 tablespoons Italian dressing (not creamy)
  • Kosher salt and freshly ground black pepper, to taste

Pasta and Sauce

  • 16 ounces dry rigatoni pasta (1 box)
  • 24 ounces marinara sauce (store-bought or homemade)

Cheese and Garnish

  • ½ cup freshly grated Parmesan cheese
  • ½ cup freshly shredded mozzarella cheese
  • Chopped fresh basil (optional, for garnish)

Instructions

  1. Prepare and cook chicken: Heat a 12-inch cast iron skillet over medium-high heat and add the cubed chicken with 2 tablespoons of Italian dressing. Season with kosher salt and freshly ground black pepper to taste. Cook the chicken until browned and just cooked through, about 5 minutes depending on thickness.
  2. Add pasta and sauce: Pour in the entire box of rigatoni pasta and the 24 ounces of marinara sauce. Fill the empty marinara jar with water and add it to the skillet (or if using a stockpot, add 2 cups of water). Lightly stir to combine all ingredients.
  3. Simmer pasta and chicken: Bring the mixture to a boil, then reduce heat to a simmer. Cover the skillet and cook for about 15 minutes or until the pasta is tender to your liking, stirring occasionally to prevent sticking.
  4. Add cheeses: Once pasta is cooked, sprinkle the grated Parmesan cheese evenly over the top, followed by the shredded mozzarella cheese. Do not stir. Cover and cook for an additional 2-3 minutes or until the cheese is fully melted.
  5. Optional broil: For extra melty and slightly browned cheese, place the skillet under a broiler for about 4 minutes, watching carefully to prevent burning.
  6. Garnish and serve: Remove from heat, sprinkle with chopped fresh basil if desired, and serve immediately. Enjoy your comforting one-pan chicken Parmesan pasta!

Notes

  • If you don’t have a large skillet, a stockpot works well too; just adjust water amount to 2 cups.
  • Cooking times may vary based on pasta thickness and stove heat; check pasta texture to avoid overcooking.
  • Use freshly grated and shredded cheeses for best melting and flavor.
  • Broiling step is optional but enhances the cheese texture and appearance.
