Ingredients

Vegetables and Herbs

  • 5 small yellow onions (sliced) or 3 large onions
  • 1 head garlic (top sliced off)
  • ½ cup sun dried tomatoes (chopped)
  • 1 handful fresh parsley (chopped)
  • 1 handful fresh basil (chopped)
  • 1 lemon (juiced)

Spices and Seasonings

  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp paprika
  • 1 tsp dried parsley

Dairy and Liquids

  • ½ cup coconut milk
  • Olive oil or sun dried tomato oil (to drizzle)

Pasta

  • 3 cups farfalle pasta (cooked according to package instructions)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the onions and enhancing their sweetness through caramelization.
  2. Prepare Onion Mixture: In a casserole dish, combine the sliced onions, chopped sun-dried tomatoes, paprika, salt, black pepper, and dried parsley. Toss these ingredients well to evenly coat the onions with the spices and seasonings.
  3. Roast Onions and Garlic: Place the whole head of garlic, with the top sliced off, in the center of the casserole dish. Drizzle the entire dish with olive oil or leftover sun-dried tomato oil to add richness. Cover the dish with foil to prevent drying out and roast in the oven for 1 hour. Halfway through the roasting time, give the onions a gentle toss to ensure even cooking. By the end, the onions should be deeply caramelized and tender.
  4. Cook Pasta: About 20 minutes before the onions are finished roasting, cook the farfalle pasta according to the package instructions. Reserve up to one cup of the pasta cooking water before draining, as this starchy water can help adjust the sauce consistency later.
  5. Prepare the Sauce: Once the onions are roasted, carefully remove the garlic head from the casserole dish. When cool enough to handle, squeeze the softened garlic cloves out of their skins and back into the dish. Add the fresh chopped parsley, basil, lemon juice, and coconut milk to the roasted onion mixture. Stir to combine all the flavors thoroughly.
  6. Combine Pasta and Sauce: Add the cooked farfalle pasta into the casserole dish along with some reserved pasta water as needed to loosen and integrate the sauce. Stir gently to coat the pasta with the rich, flavorful caramelized onion sauce.
  7. Serve: Serve the pasta warm, garnished with extra fresh herbs if desired. Enjoy this one-pan, comforting pasta meal that balances savory, sweet, and fresh notes beautifully.

Notes

  • Use sun-dried tomato oil instead of olive oil for extra depth of flavor.
  • Reserve some pasta water to adjust the sauce consistency if it feels too thick.
  • If you prefer a richer sauce, add a little grated Parmesan cheese before serving.
  • This dish can be made vegan by ensuring the pasta is egg-free; the coconut milk already provides a creamy texture.
  • Leftovers can be stored refrigerated for up to 3 days and reheated gently with a splash of water or coconut milk.
