Delicious and versatile oat flour brownies that can be fudgy or cakey, made with simple ingredients including cocoa powder, butter, and eggs. Perfect for those seeking a gluten-free treat that holds its shape well after cooling.

Ingredients

Dry Ingredients

  • 1 and 1/4 cups oat flour (certified gluten-free if needed)
  • 1 cup cocoa powder
  • 1 tsp espresso powder
  • 1/2 tsp salt
  • 1/2 tsp baking powder (for cakey version)

Wet Ingredients

  • 3/4 cup unsalted butter
  • 1 and 1/4 cup granulated sugar
  • 3 eggs
  • 3 tbsp water
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 325 °F to prepare for baking the brownies.
  2. Melt Butter and Mix Dry Ingredients: In a microwave-safe large bowl, melt the unsalted butter. Add sugar, cocoa powder, salt, and espresso powder, creaming everything together until smooth.
  3. Add Wet Ingredients: Mix in the vanilla extract, water, and eggs until the batter is well combined.
  4. Incorporate Flour and Baking Powder: Stir in the oat flour and baking powder (if making cakey brownies) until just combined.
  5. Prepare Baking Pan: Line a 9x9 inch square pan with parchment paper or a silicone liner. Pour the batter evenly into the pan.
  6. Bake: Bake for 25-30 minutes until the tops appear just set and a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool: Place the pan on a wire rack and allow the brownies to cool completely, at least 2 hours, to ensure they hold their shape.
  8. Cut and Serve: Use the parchment paper to lift the brownies out onto a cutting board. Cut into bars using a clean, sharp knife, cleaning between cuts.
  9. Enjoy: Serve and enjoy your fudgy or cakey oat flour brownies!

Notes

  • For cakey brownies, add baking powder to the batter.
  • Ensure brownies cool completely before cutting to maintain structure.
  • Use certified gluten-free oat flour if gluten sensitivity is a concern.
  • The optional vanilla extract enhances flavor but can be omitted.
  • Dense fudgy version can be made by omitting the baking powder and using 1 and 1/4 cups oat flour.
