Delight in these Nutella and Hazelnut Palmiers, a crisp and flaky puff pastry treat spread with creamy Nutella and scattered with crunchy chopped hazelnuts. Perfect as a sweet snack or a charming dessert, these palmiers are easy to prepare with minimal ingredients and a quick baking time.

Ingredients

Pastry

  • 320g / 11oz pre-made puff pastry sheet

Filling

  • 4-5 tbsp Nutella
  • 45g / 1/3 cup hazelnuts, finely chopped

For Finishing

  • Powdered sugar for dusting

Instructions

  1. Prepare the Puff Pastry: Lay the sheet of puff pastry on a parchment-lined cookie sheet. Using a spatula, spread a thin, even layer of Nutella over the entire surface of the puff pastry. Then, sprinkle the finely chopped hazelnuts evenly on top of the Nutella layer to distribute crunchy bits throughout.
  2. Roll the Pastry: Starting from one long side of the pastry, roll tightly until you reach the center. Repeat the rolling process from the opposite side until both rolls meet in the center. Rolling from the long side will result in smaller mini palmiers; rolling from the short side will produce larger palmiers.
  3. Chill the Roll: Wrap the rolled pastry tightly in plastic wrap and refrigerate for 30 minutes to firm it up, which will make slicing easier and maintain shape during baking.
  4. Preheat and Slice: Preheat your oven to 425°F (220°C). Remove the pastry roll from the refrigerator and slice it into approximately 1/2 inch thick pieces, carefully cutting so the layers stay intact.
  5. Arrange and Bake: Place the sliced palmiers on a parchment-lined cookie sheet with about 2 inches of space between each piece to allow for spreading. Bake in the preheated oven for 15 minutes or until the palmiers are puffed up and golden brown.
  6. Cool and Serve: Transfer the baked palmiers to a wire rack to cool completely. Once cooled, dust generously with powdered sugar before serving to add a touch of sweetness and visual appeal.

Notes

  • Ensure the puff pastry is properly chilled before spreading Nutella to prevent tearing.
  • Use a sharp knife to slice the roll to keep the edges clean and the shape neat.
  • Chilling the rolled pastry is crucial to help maintain the distinctive palmier shape during baking.
  • Store any leftovers in an airtight container to maintain crispiness; consume within 2 days for best quality.
  • For a nut-free variation, omit hazelnuts and increase the Nutella slightly.
