These No-Bake Homemade Energy Bars combine wholesome oats, sweet medjool dates, and crunchy almonds with creamy peanut butter for a nutritious and delicious snack. They’re easy to prepare in a food processor and set in the freezer—perfect for a quick energy boost without any baking required.

Ingredients

Energy Bar Ingredients

  • 1 1/2 cup chopped pitted dates (about 18 medjool dates)
  • 1 cup almonds
  • ¾ cup quick-cook oats (dry)
  • ¾ cup peanut butter (or almond butter)
  • 1 teaspoon ground cinnamon (optional)
  • ½ teaspoon salt (optional)
  • ½ cup chocolate chips (optional)

Instructions

  1. Prepare the Pan: Line an 8-inch square baking pan with parchment paper to prevent sticking and make it easier to remove the bars once set.
  2. Combine Dry Ingredients: In a food processor, add chopped dates, almonds, quick-cook oats, peanut butter, and if desired, cinnamon and salt.
  3. Process Mixture: Cover the food processor and pulse on high for about 30 seconds or until the mixture sticks together when pressed. This ensures the ingredients are well combined and form a dough-like consistency.
  4. Add Chocolate Chips: If using, add chocolate chips and pulse 5 times to evenly distribute them throughout the mixture without breaking them down too much.
  5. Press Into Pan: Transfer the sticky mixture into the lined baking pan and press down firmly and evenly with your hands. Pressing firmly is crucial to help the bars hold together once set.
  6. Chill in Freezer: Place the pan in the freezer and chill for at least 2 hours to allow the bars to firm up.
  7. Cut and Serve: Remove the pan from the freezer, lift out the parchment paper with the set mixture, place on a cutting board, and cut into 12 equal bars.

Notes

  • Using medjool dates provides natural sweetness and a sticky texture that helps bind the bars.
  • Quick-cook oats absorb moisture better and give a softer texture compared to rolled oats.
  • Pressing the mixture firmly into the pan is key for bars that hold together well.
  • Chocolate chips are optional but add a nice sweet touch; mini chips work best for even distribution.
  • Store the bars in an airtight container in the refrigerator or freezer to maintain freshness and firmness.
