This No-Bake Greek Yogurt Fruit Tart is a healthy and refreshing dessert perfect for any occasion. Featuring a naturally sweet and nutty crust made from dates, cashews, and almonds, it is layered with creamy Greek yogurt and topped with an assortment of fresh fruits. The optional apricot glaze adds a beautiful glossy finish, enhancing both appearance and flavor. Ready in just 25 minutes without any baking, this tart is an easy and delightful treat.

Ingredients

Crust

  • 15 pitted Medjool dates (about 230g), soaked in warm water for 10 minutes
  • 3/4 cup (100g) unsalted cashews
  • 3/4 cup (100g) unsalted almonds

Filling & Topping

  • 1 cup (250g) Greek yogurt (plain or any flavor)
  • Assorted sliced fresh fruit (such as berries, kiwi, mango, or peaches)
  • Optional topping: 2 tablespoons apricot preserves mixed with 1 tablespoon water

Instructions

  1. Prepare the Pan: Spray the bottom of a 9-inch tart pan, cake pan, or pie dish with nonstick spray and line it with a parchment paper circle slightly larger than the pan. This setup prevents sticking and helps press the crust evenly.
  2. Soak and Drain Dates: Soak the pitted Medjool dates in warm water for 10 minutes to soften them. Drain thoroughly and cut them in half to ease processing.
  3. Make the Crust: In a food processor or blender, pulse the soaked dates, cashews, and almonds until you achieve a thick, sticky dough with broken down nuts. Press this dough evenly into the prepared tart pan, extending it partly up the sides to form the crust.
  4. Add the Yogurt Filling: Spread the Greek yogurt evenly over the crust, smoothing it out for a nice base for the fruit topping.
  5. Decorate and Glaze: Arrange sliced fresh fruit over the yogurt for a colorful, appealing design. If desired, mix apricot preserves with water and brush this glaze over the fruit to give it a beautiful glossy finish.
  6. Serve or Store: Slice and serve immediately, or cover and refrigerate for up to 1 day before serving. Leftover tart can be stored covered in the refrigerator for up to 3 days.

Notes

  • Soaking dates softens them for easier blending and better texture in the crust.
  • Use parchment paper to prevent crust from sticking and help remove the tart cleanly.
  • You can customize the fruit topping based on seasonal availability and personal preference.
  • The optional apricot glaze adds shine and a touch of sweetness but can be omitted if desired.
  • The tart is best enjoyed fresh but can be refrigerated for up to 3 days.
