It's perfect for a comforting weeknight meal and can be customized with toppings like grated cheese, sour cream, cilantro, and tortilla chips.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 1 red bell pepper, diced
  • 4 garlic cloves, minced
  • Kosher salt and pepper, to taste
  • 1 pound lean ground beef or turkey
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 14 ounces crushed fire roasted tomatoes
  • 14 ounce can pinto beans, drained and rinsed
  • 10 ounces frozen corn
  • 7 ounces diced green chiles
  • 2 cups chicken or beef stock or bone broth

Toppings

  • Grated cheese (cheddar recommended)
  • Tortilla chips
  • Sour cream
  • Cilantro
  • Green onions

Instructions

  1. Prepare toppings. Set aside sour cream, green onions, grated cheddar cheese, tortilla chips, and cilantro for serving.
  2. Sauté vegetables. Heat olive oil in a large pot over medium-low heat. Add diced onions, red bell pepper, minced garlic, and season with a big pinch of kosher salt and pepper. Cook for about 5 minutes until the vegetables are softened.
  3. Brown the meat. Add the lean ground beef or turkey to the pot. Break it apart with a spoon and cook until browned, about 6 to 8 minutes.
  4. Season. Stir in garlic powder, cumin, smoked paprika, and chili powder. Cook for another 5 minutes, stirring frequently to toast the spices and develop flavors.
  5. Add liquids and other ingredients. Pour in crushed fire-roasted tomatoes, drained pinto beans, frozen corn, diced green chiles, and chicken or beef stock/bone broth. Stir to combine.
  6. Simmer. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 10 to 15 minutes to blend flavors.
  7. Adjust seasoning and serve. Uncover and taste; add additional salt, pepper, or spice if needed. Serve the soup hot topped with your choice of grated cheese, sour cream, cilantro, green onions, and tortilla chips. The soup freezes well and reheats beautifully for easy leftovers.

Notes

  • Use either lean ground beef or ground turkey depending on preference.
  • Chicken or beef stock can be substituted with bone broth for extra richness.
  • Adjust the level of chili powder and green chiles to make it spicier or milder.
  • Leftovers freeze well for up to 3 months.
  • Perfect served with warm cornbread or over rice.
