This easy stir-fry combines sweet, salty, and umami flavors, garnished with fresh green onions and white sesame seeds, perfect for a satisfying weeknight meal.

Ingredients

Noodles

  • 10 ounces rice noodles

Beef and Aromatics

  • 1 pound ground beef (80/20)
  • 1 teaspoon fresh ginger, finely minced
  • 4 garlic cloves, finely minced

Sauce

  • ½ cup low-sodium soy sauce
  • 2 tablespoons dark soy sauce
  • ½ cup water
  • ¼ cup brown sugar
  • 3 tablespoons cornstarch

Garnish

  • Green onions, sliced
  • White sesame seeds

Instructions

  1. Prepare the sauce: In a bowl, whisk together low-sodium soy sauce, dark soy sauce, water, brown sugar, and cornstarch until smooth and set aside to use later.
  2. Cook the noodles: Prepare the rice noodles according to package instructions, typically soaking or boiling until tender, then drain and set aside.
  3. Brown the beef: Heat a little cooking oil in a large wok or skillet over medium-high heat. Add the ground beef and use a wooden spoon or spatula to break it into small pieces. Cook until it is mostly browned and there is almost no pink left, about 5-7 minutes.
  4. Sauté aromatics: Add the finely minced ginger and garlic to the beef. Continue cooking for 2-3 minutes until fragrant and aromatic, stirring frequently to prevent burning.
  5. Simmer with sauce: Pour the prepared sauce over the beef mixture. Allow it to gently simmer for 3-4 minutes, stirring occasionally, so the sauce thickens and coats the beef thoroughly.
  6. Toss noodles: Add the cooked rice noodles on top of the beef and sauce. Use tongs or spatula to toss and combine everything well, ensuring all noodles are evenly coated with the thickened sauce.
  7. Garnish and serve: Transfer to serving plates and garnish generously with sliced green onions and white sesame seeds for added texture and flavor.

Notes

  • Use 80/20 ground beef for ideal flavor and moisture.
  • If preferred, substitute rice noodles with udon or egg noodles.
  • Adjust the sweetness by varying the amount of brown sugar to taste.
  • This dish is best enjoyed immediately for perfect noodle texture.
  • For a spicier kick, add crushed red pepper flakes or a dash of chili oil.
