Ingredients

Chicken and Seasoning

  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • Heaping ½ teaspoon garlic powder, plus extra for dredging
  • 1 ½ teaspoons kosher salt
  • Ground black pepper, to taste

Breading Station

  • ½ cup rice flour (can substitute all-purpose flour)
  • 2 large eggs, lightly beaten
  • 2 ½ cups panko breadcrumbs
  • Pinch of kosher salt, garlic powder, and ground black pepper for seasoning the flour, eggs, and breadcrumbs

Frying

  • Frying oil of choice, enough to fill about 1 inch in a deep skillet

Instructions

  1. Prepare the frying oil: Pour about 1 inch of frying oil into a deep skillet and preheat it over medium-high heat on the stovetop. The oil is ready when it reaches approximately 350-375°F and sizzles upon dropping a breadcrumb into it.
  2. Prepare the chicken: If using chicken breasts, butterfly each piece by slicing horizontally in half and then pound to a thickness of ½ inch with a meat mallet. For chicken thighs, flatten by making a shallow cut through thick areas and opening like a book to ensure even thickness. Season both sides of the chicken with garlic powder, kosher salt, and black pepper. Set aside while preparing the breading station.
  3. Set up the breading station: Arrange three shallow bowls: one with rice flour, one with the beaten eggs, and one with panko breadcrumbs. Season each with a pinch of kosher salt, garlic powder, and ground black pepper, then stir to combine evenly.
  4. Dredge the chicken cutlets: Working one piece at a time, lightly coat the chicken in the seasoned rice flour, shaking off any excess. Dip the chicken into the beaten eggs, allowing excess to drip off. Then press it firmly into the panko breadcrumbs until well coated. Shake off any extra breadcrumbs and set the chicken aside on a clean plate. Repeat for all pieces.
  5. Cook the chicken katsu: When the oil is hot, carefully lower the breaded chicken into the skillet without overcrowding. Fry each cutlet for 3-4 minutes per side or until the coating is golden brown and the chicken is cooked through. Transfer the cooked chicken to a paper towel-lined plate to drain excess oil. While still warm, season lightly with salt. Repeat for remaining cutlets.
  6. Serve: Serve the chicken katsu immediately with katsu sauce and your favorite sides such as steamed Calrose rice and mac salad for an authentic Hawaiian-style plate lunch. Enjoy this crispy, flavorful dish fresh and hot!

Notes

  • Butterflying and pounding chicken ensures even cooking and tenderness.
  • Using rice flour helps achieve a light, crispy coating, but all-purpose flour can be substituted if necessary.
  • Maintain oil temperature between 350-375°F to avoid greasy cutlets and ensure proper crisping.
  • Do not overcrowd the pan to prevent temperature drop and soggy breading.
  • Drain fried chicken on paper towels to remove excess oil for a crisp finish.
  • Serve immediately for best texture and flavor.
