Ingredients

Main Ingredients

  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 cup frozen peas, thawed
  • 1/2 cup good-quality tahini
  • 1/4 cup cold water, or more if needed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly-squeezed lemon juice
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1 teaspoon fine sea salt
  • 2 medium garlic cloves, peeled and smashed
  • 20-25 medium fresh mint leaves, to taste

Instructions

  1. Combine Ingredients: Place the rinsed and drained chickpeas, thawed peas, tahini, cold water, olive oil, lemon juice, black pepper, ground cumin, sea salt, garlic cloves, and fresh mint leaves into a food processor.
  2. Blend: Purée the ingredients for about 2 minutes or until the mixture is smooth and creamy, stopping occasionally to scrape down the sides of the bowl to ensure everything is evenly blended.
  3. Season: Taste the hummus and adjust the seasoning by adding more salt, lemon juice, or mint leaves according to your preference for brightness and flavor balance.
  4. Serve: Transfer the finished mint pea hummus to a serving bowl and enjoy immediately with pita bread, fresh vegetables, or use as a spread.

Notes

  • The tahini quality greatly influences the flavor, so use a good-quality brand.
  • Adjust the cold water quantity to achieve your desired consistency.
  • For a smoother texture, peel the chickpeas before blending if desired.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Fresh mint can be increased or decreased based on your taste preference.
