Minnesota Love Cookies are delicate, buttery pistachio cookies with a hint of cardamom and lemon zest, traditionally baked and dipped in silky white chocolate. Enhanced with optional floral or earthy notes from sumac or chamomile and finished with edible decorations, these elegant treats combine a tender crumb with vibrant flavors and stunning presentation, perfect for gifting or special occasions.

Ingredients

Dry Ingredients

  • 2 ⅓ cups (280g) all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon cardamom
  • ½ teaspoon ground sumac or chamomile (optional, for an earthy or floral flavor)
  • 1 teaspoon dried lemon zest
  • ½ cup (60g) finely chopped unsalted pistachios

Wet Ingredients

  • 1 cup (227g) unsalted butter, at room temperature
  • 1 cup (120g) powdered sugar or ⅔ cup (130g) granulated sugar
  • 1 teaspoon vanilla extract or vanilla bean paste

For Decoration

  • 1 cup (170g) white chocolate chips or melting wafers, for dipping
  • Dried edible flowers or edible gold flake, for sprinkling (optional)

Instructions

  1. Prepare Dry Mixture: In a medium bowl, sift together the all-purpose flour, salt, cardamom, ground sumac or chamomile (if using), dried lemon zest, and finely chopped pistachios. Set this mixture aside for later use.
  2. Cream Butter and Sugar: In a separate mixer bowl fitted with the paddle attachment, combine the room temperature unsalted butter and powdered sugar. Beat on medium-low speed for 2 to 3 minutes until the mixture is light and fluffy. Add the vanilla extract or vanilla bean paste and mix until incorporated.
  3. Combine Dry and Wet Ingredients: Reduce the mixer speed to low and gradually add the flour and pistachio mixture to the creamed butter and sugar. Mix just until the dough comes together, being careful not to overmix to avoid tough cookies.
  4. Chill Dough: Form the dough into a ball and gently flatten it into a disc. Wrap it tightly in plastic wrap and refrigerate for 1 to 2 hours until the dough is firm enough to roll out. For extended storage, refrigerate up to 3 days or freeze up to a month, thawing overnight in the fridge before use.
  5. Roll and Cut Dough: Remove the dough from the refrigerator and let it soften slightly at room temperature for a few minutes. On a lightly floured surface or between two sheets of parchment paper, roll out the dough to about ¼-inch thickness. Use cookie cutters to cut into 2-inch rounds, hearts, or Minnesota-shaped cookies and place them on baking sheets lined with parchment paper. If the dough warms and becomes difficult to handle, chill again briefly. Re-roll scraps to use all the dough.
  6. Chill Cookies Before Baking: Place the cookie sheets in the freezer or refrigerator for at least 30 minutes to firm up the dough and minimize spreading during baking.
  7. Bake Cookies: Preheat the oven to 350°F (180°C). Bake the chilled cookies for 8 to 12 minutes, or until the edges turn golden brown. Baking times may vary depending on cookie size and oven performance. After baking, allow the cookies to cool on the baking sheets for 10 minutes before transferring them to a wire rack to cool completely.
  8. Melt White Chocolate: Place white chocolate chips or melting wafers in a microwave-safe bowl and melt in 30-second intervals, stirring between each until smooth and glossy. Alternatively, melt chocolate over a double boiler by placing half the chocolate in a heatproof bowl over simmering water, stirring until melted, then adding the remaining chocolate and stirring off the heat until smooth.
  9. Dip Cookies: Dip half of each cooled cookie into the melted white chocolate and place them on a parchment-lined baking sheet. Quickly decorate with dried edible flowers, pistachio pieces, or edible gold flakes before the chocolate hardens. Refrigerate the decorated cookies for a few minutes to set the chocolate.
  10. Store Cookies: Store the finished cookies in an airtight container at room temperature for up to one week. They also freeze well for up to two months when stored in an airtight container.

Notes

  • Do not overmix the dough to keep the cookies tender and avoid toughness.
  • If the dough becomes too warm during rolling, chill it again to make it easier to handle.
  • Chilling the cut cookies before baking helps maintain their shape and prevents excessive spreading.
  • You can use either powdered sugar or granulated sugar; powdered sugar yields a finer texture while granulated sugar gives a slightly crisper bite.
  • The optional sumac or chamomile adds a unique earthy or floral note but can be omitted for a more classic flavor.
  • Decorating with edible flowers or gold flakes adds an elegant touch, making these cookies perfect for special occasions or gifts.
  • Cookies freeze well; thaw thoroughly before decorating with chocolate if freezing dough or plain baked cookies.
