Ingredients

Cookie Dough

  • 160 grams Unsalted butter
  • 150 grams Light brown sugar
  • 100 grams White caster sugar
  • 1 medium Egg (room temperature)
  • 1 Egg yolk (room temperature)
  • 1 teaspoon Vanilla extract
  • 280 grams Self-raising flour
  • 1 teaspoon Salt
  • 100 grams Blonde chocolate (e.g., Milkybar Gold), chopped into small chunks

Filling

  • 1 jar Mincemeat (approx. 340 grams)

Instructions

  1. Browning the Butter: Measure the unsalted butter into a medium saucepan and place it over medium heat. Stir until fully melted. Continue heating for about 5 minutes, swirling the pan occasionally, until the melted butter is foamy on top, has a golden amber color beneath, and releases a nutty aroma. You will notice brown flecks forming at the bottom of the pan. Carefully pour the browned butter into a mixing bowl and let it cool for 10 minutes to prevent cooking the eggs in the next step.
  2. Mixing Sugars: Add the light brown sugar and white caster sugar to the cooled browned butter. Mix well until thoroughly combined, creating a smooth, homogeneous mixture.
  3. Adding Eggs and Vanilla: Incorporate the room temperature egg, egg yolk, and vanilla extract into the sugar and butter mixture. Mix until fully combined, ensuring a uniform batter.
  4. Incorporating Dry Ingredients: Add the self-raising flour and salt to the wet ingredients. Fold the mixture gently but thoroughly to form a thick, cohesive cookie dough. Be careful not to overmix to maintain tenderness.
  5. Adding Chocolate Chunks: Fold in the chopped blonde chocolate pieces evenly throughout the dough to ensure every cookie has a delicious, creamy bite.
  6. Chilling the Dough: Cover the dough bowl tightly with clingfilm or plastic wrap. Place it in the refrigerator and chill for 2 hours. This firming step improves the cookie texture and flavor balance.
  7. Preparing to Bake: Preheat your oven to 180°C fan / 200°C conventional. Line a large baking sheet with greaseproof paper to prevent sticking and facilitate cleanup.
  8. Shaping Cookies: Using a spoon, scoop heaped tablespoons of the chilled dough and roll into balls. You should yield about 12 to 14 cookies. Press the back of a spoon into the center of each dough ball to create a well. Fill each well generously with a heaped teaspoon of mincemeat. If the dough cracks around the filling, gently pinch the sides back together to seal.
  9. Baking: Place 4 to 5 cookies on the prepared baking sheet, leaving enough space to allow spreading. Bake for 10 to 12 minutes or until cookies are golden and firm around the edges, while the centers remain slightly underbaked for a soft texture.
  10. Cooling and Serving: Remove cookies from the oven and let them cool on the tray for 20 minutes to firm up completely. Once cooled, dust lightly with icing sugar for a festive finish. Enjoy these delightful mince pie flavored treats with a warm beverage or as a holiday snack.

Notes

  • Browning the butter enhances the cookie’s nutty, rich flavor and adds depth to the taste.
  • Chilling the dough is important to prevent spreading and to develop better flavor and texture.
  • Fill the wells with mincemeat just before baking to avoid soggy dough.
  • If mincemeat is not available, dried fruit with spices mixed with a bit of orange zest can be a substitute.
