A vibrant and flavorful Mediterranean Eggplant Salad featuring roasted eggplant cubes tossed with aromatic spices, fresh herbs, cherry tomatoes, and tangy feta cheese, all dressed in a zesty lemon-olive oil dressing. Perfect as a warm side dish or light main course.

Ingredients

Roasted Eggplant

  • 2 medium eggplants (or 4 Italian eggplants), cut into ¾-inch cubes
  • 3 tablespoons olive oil, divided
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Salad and Dressing

  • 1 cup cherry tomatoes, halved
  • ½ small red onion, very thinly sliced
  • ¼ cup chopped fresh parsley
  • ¼ cup crumbled feta cheese
  • 2 tablespoons chopped fresh mint
  • 1 large lemon, juiced (about 3 tablespoons)
  • 2 tablespoons extra-virgin olive oil
  • 1 small garlic clove, grated
  • ½ teaspoon dried oregano

Instructions

  1. Preheat and Prepare Eggplant: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Toss Eggplant with Spices and Oil: In a large bowl, combine the eggplant cubes with 2 tablespoons of olive oil, ground cumin, ground coriander, salt, and black pepper. Toss well to coat all pieces evenly with the spices and oil.
  3. Roast Eggplant: Spread the seasoned eggplant cubes in an even layer on the prepared baking sheet, making sure they are not crowded to allow for even roasting. Roast in the preheated oven for 30 minutes, flipping the cubes halfway through, until they are golden brown, tender, and have crisp edges.
  4. Make the Dressing: While the eggplant is roasting, whisk together the remaining 1 tablespoon of olive oil, fresh lemon juice, grated garlic, and dried oregano in a large mixing bowl to create a bright and flavorful dressing.
  5. Combine Warm Eggplant with Dressing: Add the thinly sliced red onion and warm roasted eggplant directly to the bowl with the dressing. Gently toss everything together until the eggplant and onions are well coated with the dressing.
  6. Add Fresh Ingredients and Feta: Fold in the halved cherry tomatoes, chopped parsley, chopped mint, and crumbled feta cheese. Toss once more gently to combine all the ingredients without breaking the eggplant pieces.
  7. Serve Warm: Serve the salad warm as a side dish or light main course, enjoying the perfect balance of roasted, fresh, and tangy flavors.

Notes

  • You can substitute Italian eggplants if medium eggplants are not available; adjust roasting time as needed.
  • Feel free to add a handful of kalamata olives for extra Mediterranean flavor.
  • This salad can be served at room temperature or cold, but it’s best enjoyed warm to bring out the roasted flavors.
  • For a vegan version, omit the feta or substitute with a vegan cheese alternative.
  • Make sure not to overcrowd the baking sheet, as this helps the eggplant roast evenly and become crisp.
