A comforting and hearty Mashed Potato Meatloaf recipe that combines classic meatloaf flavors with a creamy mashed potato topping. This dish is perfect for family dinners, delivering a delicious twist on traditional meatloaf with a sweet ketchup glaze and buttery mashed potato frosting.

Ingredients

Meatloaf Mixture

  • 1/2 cup milk
  • 1 cup panko breadcrumbs
  • 2 pounds ground beef or meatloaf mix
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chopped parsley
  • 3 eggs, beaten

Topping

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 3 cups prepared mashed potatoes
  • 2 tablespoons melted butter

Instructions

  1. Preheat and prepare pan. Preheat your oven to 350 degrees Fahrenheit. Spray a loaf pan with cooking spray to prevent sticking.
  2. Mix breadcrumbs and milk. In a mixing bowl, combine the milk and panko breadcrumbs, stirring well to evenly moisten the crumbs.
  3. Combine meatloaf ingredients. Add the ground beef, salt, pepper, chopped parsley, and beaten eggs to the breadcrumb mixture. Mix thoroughly, ideally with your hands, to evenly combine all ingredients.
  4. Shape and place meatloaf. Form the meat mixture into a loaf shape and place it carefully in the prepared loaf pan.
  5. Prepare and apply glaze. In a small bowl, mix together ketchup and brown sugar until smooth. Pour or brush this glaze over the top of the meatloaf, spreading it evenly to the sides.
  6. Bake the meatloaf. Bake the meatloaf in the preheated oven for one hour. After baking, remove it from the oven and let it rest for 10 minutes. Meanwhile, increase the oven temperature to 450 degrees Fahrenheit.
  7. Add mashed potato frosting and brown. Spread the prepared mashed potatoes over the top (and sides if desired) of the meatloaf. Drizzle melted butter over the mashed potatoes. Return the meatloaf to the oven and bake until the mashed potatoes begin to turn golden brown, about 5 to 10 minutes.
  8. Rest and serve. Let the meatloaf rest for about 5 minutes before slicing. Serve warm and enjoy!

Notes

  • Use freshly prepared mashed potatoes or leftovers that hold their shape well for the topping.
  • Panko breadcrumbs provide a lighter texture but can be substituted with regular breadcrumbs.
  • Adjust seasoning in the meat mixture to taste, adding garlic or onion powder if desired.
  • Letting the meatloaf rest after baking helps the juices redistribute for a moister result.
  • The mashed potato topping adds richness and a unique presentation, but you can skip it for a traditional meatloaf.
