These Lemon Brownies combine the rich, creamy sweetness of white chocolate with the bright, zesty flavor of fresh lemon. Baked to a perfect fudgy texture and topped with a tangy lemon glaze, they make a delightful dessert or snack that balances sweet and citrusy notes beautifully.

Ingredients

Brownie Ingredients

  • ½ cup butter (113 grams)
  • 2/3 cup chopped white chocolate (100 grams or 3.5 oz)
  • 3/4 cup granulated sugar (150 grams)
  • 2 tablespoons lemon zest
  • 2 large eggs
  • 1 egg yolk
  • 1 tablespoon lemon juice
  • 3/4 cup + 1 tablespoon all-purpose flour (100 grams)
  • 1/2 teaspoon kosher salt

Glaze Ingredients

  • 1 cup powdered sugar (120 grams)
  • 1-2 tablespoons fresh lemon juice, as needed

Instructions

  1. Melt chocolate: Fill a small saucepan with 2-3 inches of water and bring it to a simmer over medium heat. Place the butter and chopped white chocolate in a heatproof bowl and set it over the simmering water, making sure the bowl doesn’t touch the water. Stir constantly until the chocolate and butter have completely melted and combined. Remove from heat and set aside to cool slightly.
  2. Preheat oven and prepare pan: Preheat your oven to 350°F (180°C). Grease an 8×8-inch baking dish thoroughly to prevent sticking.
  3. Make batter: In a mixing bowl, combine the granulated sugar with the lemon zest by rubbing them together with your fingers to release the oils and aroma. Add the melted white chocolate mixture and stir well until fully incorporated. Beat in the eggs and egg yolk along with 1 tablespoon of lemon juice, mixing until smooth. Finally, fold in the all-purpose flour and kosher salt until just combined to avoid overmixing.
  4. Bake: Pour the batter into the prepared baking dish and spread evenly. Bake in the preheated oven for 23 to 25 minutes, or until the edges are set but the center is still fudgy. Allow the brownies to cool completely in the pan; the texture improves after resting.
  5. Prepare glaze: In a small bowl, whisk together the powdered sugar and 1 tablespoon of fresh lemon juice. Add lemon juice gradually until the glaze reaches a soft, spreadable consistency.
  6. Glaze brownies: Once the brownies have completely cooled, spread the lemon glaze evenly over the top. Allow the glaze to set before cutting into squares and serving.

Notes

  • For best flavor, let the brownies rest overnight to develop a more intense lemon and brownie texture.
  • Use fresh lemon zest and juice for the brightest flavor.
  • If white chocolate is not available, high-quality white chocolate chips can be substituted.
  • Ensure the glaze is not too runny to avoid dripping; adjust powdered sugar or lemon juice amounts accordingly.
  • Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
