Lemon Posset is a classic British dessert made with just three simple ingredients: double cream, caster sugar, and fresh lemons. This indulgent and elegant dessert is creamy and zesty with a smooth texture, making it a perfect no-fuss treat for entertaining guests or a special family dessert. Its quick preparation and minimal ingredients make it both convenient and delicious.

Ingredients

Posset Base

  • 900 ml double cream
  • 250 g caster sugar
  • 3 lemons (zest and juice)

Instructions

  1. Prepare Lemon Zest: Zest one of the lemons onto a small plate and set aside for decoration later.
  2. Combine Remaining Lemon Zest: Zest the two other lemons and place the zest into a large saucepan, keeping the whole lemons for juicing in the next step.
  3. Heat Cream and Sugar: Add the double cream and caster sugar to the saucepan with the lemon zest. Warm over medium heat, stirring gently to dissolve the sugar.
  4. Bring to Boil: Increase the heat and bring the cream mixture to a boil. Allow it to bubble gently for 1 minute, then remove the pan from the heat to prevent scorching.
  5. Add Lemon Juice: Juice the previously reserved lemons and stir the juice into the warm cream mixture thoroughly to combine and thicken.
  6. Pour into Ramekins: Carefully pour the lemon posset mixture into individual glasses or ramekins.
  7. Chill: Cover the ramekins with plastic wrap or lids and refrigerate for at least 2 hours, or preferably overnight, to set properly.
  8. Serve: Before serving, sprinkle the reserved lemon zest over the top as a fresh, decorative garnish.

Notes

  • Use fresh, unwaxed lemons for the best flavor and safe zesting.
  • Double cream is essential for the rich, creamy texture; do not substitute with lighter cream.
  • Chilling time is important for the posset to set into a smooth, custard-like consistency.
  • This dessert can be made a day ahead, making it perfect for entertaining.
  • For a tangier flavor, adjust the amount of lemon juice carefully.
  • Ensure gentle boiling to avoid curdling the cream.
