A vibrant and flavorful Lemon Garlic Chicken recipe featuring tender cutlets marinated in a zesty blend of lemon, garlic, and Italian herbs, then seared to golden perfection in a cast iron skillet. This dish is perfect for a quick, healthy dinner that bursts with fresh Mediterranean flavors.

Ingredients

Marinade

  • 2 lemons
  • 1/4 cup extra virgin olive oil
  • 5 large garlic cloves, crushed or minced
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped Italian parsley, plus more for garnish

Chicken

  • 2 pounds boneless skinless chicken breasts (about 4 large breasts)
  • Kosher salt, to taste
  • Black pepper, to taste
  • Extra virgin olive oil (for cooking, about 2 tablespoons)

Instructions

  1. Make the marinade: Zest and juice one lemon into a large bowl. Add the olive oil, crushed garlic, Italian seasoning, red pepper flakes (if using), and chopped parsley. Whisk everything together until well combined. Set aside to let the flavors meld.
  2. Slice the chicken breasts into cutlets: Place each chicken breast flat on a cutting board. Holding it firmly with your non-dominant hand, carefully slice horizontally from the thicker side to create two thin cutlets per breast. For even thickness, you may cover the cutlets with plastic wrap and gently pound with a kitchen mallet.
  3. Dry and season the chicken: Pat each cutlet dry with paper towels. Season generously with kosher salt and black pepper on both sides. Place the chicken in the marinade, turning to coat each piece thoroughly. Cover and refrigerate for 30 minutes up to 2 hours to enhance flavor and tenderness.
  4. Cook the chicken: Heat 2 tablespoons of olive oil in a large cast iron skillet over medium heat until shimmering. Add the chicken cutlets in a single layer without crowding—cook in batches if necessary. Sear the chicken for about 4 minutes per side until golden brown and the juices run clear. The internal temperature should reach 160°F at this stage.
  5. Rest the chicken: Remove the skillet from heat and tent the chicken with foil. Let it rest for 5 minutes, allowing the temperature to rise to 165°F, ensuring the chicken is fully cooked and juicy inside. Meanwhile, slice the remaining lemon for garnish.
  6. Garnish and serve: Arrange the chicken on a serving platter. Garnish with additional chopped parsley and fresh lemon slices. Serve immediately, enjoying the fresh citrus and garlicky flavors.

Notes

  • For more tender chicken, marinate up to 2 hours but no longer to avoid overpowering the texture.
  • Use a meat thermometer to check doneness for the best results and safe cooking.
  • Optional red pepper flakes add a subtle heat; omit if you prefer a milder flavor.
  • Cast iron skillet is preferred for even heat and a nice sear, but a heavy-bottomed non-stick skillet can be used.
  • Serve with rice, roasted vegetables, or a fresh salad for a complete meal.
