Ingredients

Main Ingredients

  • 1 medium yellow onion (quartered)
  • 2 garlic cloves
  • 1 whole bunch parsley (stems removed, about 2 packed cups parsley leaves)
  • 1 lb ground beef
  • 1/2 lb ground lamb
  • 1 slice of bread (toasted until browned and soaked in water until fully tender)
  • Salt and pepper to taste
  • 1 1/2 tsp ground allspice
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground green cardamom
  • 1/2 tsp ground sumac
  • 1/2 tsp ground nutmeg
  • 1/2 tsp paprika

To Serve

  • Pita bread
  • Tahini sauce
  • Tomato wedges
  • Onion wedges
  • More parsley

Instructions

  1. Soak Skewers and Prepare Grill: Soak 10 wooden skewers in water for 30 minutes to 1 hour to prevent burning. Lightly oil the grates of a gas grill and preheat to medium-high for about 20 minutes.
  2. Prepare Sides and Tahini Sauce: Prepare pita bread and any desired fixings. Make tahini sauce from your preferred recipe and prepare fresh tomato wedges, onion wedges, and parsley for serving before grilling the kebabs.
  3. Process Aromatics: In a food processor, chop the quartered onion, garlic cloves, and parsley until finely minced to form the flavorful base of the meat mixture.
  4. Mix Meat and Spices: Add the ground beef, ground lamb, soaked and squeezed bread, and all the spices (salt, pepper, allspice, cayenne pepper, cardamom, sumac, nutmeg, and paprika) to the food processor. Blend until the mixture is well combined and forms a pasty consistency.
  5. Form Kofta Kebabs: Transfer the meat mixture to a large bowl. Take a fistful of the mixture and mold it around each soaked skewer, shaping each kofta kebab to about 1 inch in thickness. Repeat until all the meat is used.
  6. Arrange Kebabs: Place the skewered kofta kebabs on a tray lined with parchment paper to keep them ready for grilling.
  7. Grill Kebabs: Place the kebabs on the preheated, lightly oiled gas grill. Cook on medium-high heat for 4 minutes on one side, then turn and grill for an additional 3 to 4 minutes until fully cooked and nicely charred.
  8. Serve: Serve the kofta kebabs immediately with warm pita bread, tahini sauce, tomato wedges, onion wedges, and fresh parsley for a delicious and authentic meal.

Notes

  • Soaking the wooden skewers prevents them from burning on the grill.
  • Make sure to squeeze all water out of the soaked bread before mixing to avoid soggy meat.
  • Adjust cayenne pepper to control the spiciness to your taste.
  • You can substitute lamb with additional beef if lamb is not available.
  • Leftover kebabs can be refrigerated for up to 2 days and reheated on a grill or stovetop.
  • Tahini sauce adds a creamy texture and nutty flavor that complements the spices in the kofta.
