This Jalapeno Popper Sandwich recipe combines the spicy kick of roasted jalapenos stuffed with creamy cheese, layered with savory beef and melted Monterey Jack and sharp cheddar cheeses, all grilled to golden perfection between slices of Italian bread. Perfect for a flavorful lunch or a hearty snack, these sandwiches offer a delightful blend of textures and tastes with a touch of fresh cilantro for optional brightness.

Ingredients

Jalapeno Popper Filling

  • 2 jalapenos, sliced lengthwise, seeds and membranes removed
  • 4 ounces cream cheese

Sandwich Components

  • 4 slices beef
  • 2 slices Monterey Jack cheese
  • 2 slices sharp cheddar cheese
  • 4 slices Italian bread
  • Chopped cilantro (optional)
  • Pats of butter (for grilling)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the stuffed jalapenos.
  2. Stuff and Bake Jalapenos: Stuff each jalapeno half with about 1 ounce of cream cheese. Arrange the stuffed jalapenos on a baking sheet and bake in the oven for 25-30 minutes until they are softened and slightly roasted. Remove from oven and let cool slightly.
  3. Assemble Sandwiches: Lay out the bread slices. Place one slice of sharp cheddar cheese on two slices of bread and one slice of Monterey Jack on the other two slices, so each sandwich will contain both cheeses. Slice the baked stuffed jalapenos into bite-sized pieces and distribute the jalapeno slices evenly over the cheddar-covered bread slices. Add the four slices of beef on top of the Monterey Jack-covered slices. Optionally sprinkle chopped cilantro on either side, then combine each cheddar slice bread with one Monterey Jack slice bread to form two sandwiches.
  4. Grill the Sandwiches: Place several pats of butter on top of each sandwich. Heat a skillet over medium-low heat and place the sandwiches butter side down. Add additional pats of butter on top. Grill each side of the sandwich until the bread turns lightly browned and the cheese inside melts to a gooey texture, flipping carefully to avoid spilling the filling.

Notes

  • Removing the seeds and membranes from jalapenos reduces the heat but retains flavor; adjust based on your spice preference.
  • For a vegetarian option, omit the beef and add extra cheese or grilled vegetables.
  • Be sure to grill on medium-low heat to allow the cheese to melt perfectly without burning the bread.
  • Adding fresh cilantro is optional but adds a refreshing flavor dimension.
  • The sandwich is best served hot to enjoy the gooey melted cheese and roasted jalapeno filling fully.
