Ingredients

Sausage Layer

  • 19.5 oz. uncooked turkey or pork Italian sausage
  • 2 tsp. olive oil (for cooking sausage)

Mushroom Layer

  • 1 lb. sliced mushrooms (fresh or pre-sliced, rinsed if fresh)
  • 2 tsp. olive oil (for cooking mushrooms)

Cheese and Egg Mixture

  • 2 cups grated Mozzarella cheese, divided
  • 1/4 cup sliced green onions, plus extra for garnish (optional)
  • 1 cup cottage cheese, rinsed and drained
  • 10 large eggs, beaten until well combined
  • 1 tsp. Spike seasoning (optional)
  • 1/4 cup coarsely grated Parmesan cheese
  • Fresh ground black pepper to taste

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Spray a large casserole dish (approximately 9" x 13") with non-stick cooking spray to prevent sticking.
  2. Cook Sausage: Heat 2 teaspoons of olive oil in a non-stick frying pan over medium-high heat. Remove Italian sausage from casings and cook in the pan, breaking it apart with a metal turner, until browned and fully cooked, about 5 minutes.
  3. Layer Sausage: Spread the cooked sausage evenly in the bottom of the prepared casserole dish.
  4. Cook Mushrooms: If using whole mushrooms, rinse, dry, and slice them. In the same frying pan, add another 2 teaspoons of olive oil and cook mushrooms until all moisture is released and evaporated, and they begin to brown slightly.
  5. Layer Mushrooms: Spread the sautéed mushrooms over the sausage layer in the casserole dish.
  6. Add Cheese and Onions: Sprinkle 1 cup of grated Mozzarella cheese and 1/4 cup of sliced green onions over the sausage and mushrooms.
  7. Prepare Cottage Cheese: Rinse the cottage cheese gently under cold water using a fine strainer and allow it to drain well. This step firms up the casserole texture.
  8. Mix Eggs and Cheese: Beat the eggs thoroughly until yolks and whites are combined. Stir in Spike seasoning, drained cottage cheese, and Parmesan cheese, mixing well.
  9. Combine Mixture in Casserole: Pour the egg mixture evenly over the layered ingredients in the casserole dish.
  10. Mix Gently: Use a fork to gently mix the egg mixture with the layers to combine all ingredients without disturbing the layers too much.
  11. Top with Cheese: Sprinkle the remaining 1 cup of grated Mozzarella cheese evenly on top.
  12. Bake: Bake in the preheated oven for 30 to 35 minutes, or until the center is set and the top is lightly browned.
  13. Serve: Serve hot, garnished with additional green onions if desired.

Notes

  • Rinsing and draining the cottage cheese helps achieve a firmer casserole texture, but can be skipped if desired.
  • Slicing mushrooms ahead or using pre-sliced will save prep time; just rinse fresh mushrooms before slicing.
  • Spike seasoning can be substituted with your preferred egg seasoning blend for different flavor profiles.
  • Be careful not to overmix the casserole after pouring the egg mixture to keep distinct layers.
  • This dish can be prepared a day ahead and refrigerated before baking to save time in the morning.
