Ingredients

Lemon Herb Dressing

  • Juice of one lemon
  • 1/3 cup olive oil
  • 1/2 tsp salt (adjust to taste)
  • Pepper, to desired amount
  • 1/2 tsp Italian seasoning
  • 1-2 garlic cloves, finely minced
  • 1 1/2 tsp honey
  • Dashes of Worcestershire sauce
  • 1 tsp honey Dijon or regular Dijon mustard

Salad

  • 5 cups chopped romaine (about 3 heads)
  • 1 pint cherry tomatoes
  • 6 ounces sliced spiced salami (such as pepperoni or Volpi Sopressata)
  • 4 ounces Havarti cheese, cubed
  • 1 avocado, sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup sliced pepperoni
  • 3 tablespoons crushed pistachios

Instructions

  1. Make the Dressing: In a salad shaker or jar, combine the lemon juice, olive oil, salt, pepper, Italian seasoning, finely minced garlic, honey, Worcestershire sauce, and Dijon mustard. Shake vigorously until the dressing is emulsified and well combined.
  2. Assemble the Salad: Place the chopped romaine lettuce in a large salad bowl. Add the cherry tomatoes, sliced spiced salami, cubed Havarti cheese, sliced avocado, Kalamata olives, sliced pepperoni, and crushed pistachios on top.
  3. Toss and Serve: When ready to serve, pour your desired amount of the lemon herb dressing over the salad and toss gently but thoroughly to coat all the ingredients evenly. Serve immediately and enjoy this fresh, flavorful antipasto salad!

Notes

  • You can substitute the salami with your favorite cured meats like prosciutto or capicola for a different flavor profile.
  • For a nuttier crunch, try toasted pine nuts or walnuts instead of pistachios.
  • The avocado adds creaminess, so add just before serving to prevent browning.
  • Adjust the honey or mustard in the dressing to balance acidity and sweetness according to your taste.
  • This salad is best enjoyed fresh, but leftovers can be stored separately from dressing for up to one day.
