Ingredients

For the Cucumber Raita

  • 1 batch cucumber raita (prepared and chilled ahead as per recipe)

For the Lamb Marinade and Curry

  • 5 tablespoons roughly chopped ginger root (about 5-inch by 2-inch piece)
  • 3 tablespoons roughly chopped garlic (6-7 large cloves)
  • 1/2 teaspoon kosher salt (for marinade)
  • A few grinds of fresh ground black pepper (for marinade)
  • 2 pounds boneless leg of lamb, fat trimmed off, cut into 1-inch cubes
  • 2 (15-ounce) cans tomato sauce
  • 1/4 to 3/4 teaspoon ground cayenne pepper (adjust to heat preference)
  • 1 tablespoon sweet paprika (not hot)
  • 2 teaspoons kosher salt (for curry)
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 3 tablespoons olive oil
  • 2 medium red or yellow onions, peeled, halved and thinly sliced
  • 2 tablespoons olive oil (additional for browning lamb)

For the Saffron Rice

  • 2 cups basmati rice (preferably Indian)
  • 2 tablespoons ghee or butter
  • 2 teaspoons cumin seeds
  • 4 cardamom pods
  • 2 dried bay leaves
  • 2 cinnamon sticks
  • 1 red onion, peeled, halved and thinly sliced
  • 1/2 teaspoon heaping saffron threads (about 1 gram or 0.04 ounces)
  • 2 teaspoons kosher salt (for rice cooking)
  • 2 cups cold water

Instructions

  1. Prepare Cucumber Raita: Make one batch of cucumber raita ahead of time and chill it for at least 3 hours or until serving.
  2. Make Ginger-Garlic Paste: Pulse chopped ginger and garlic a few times in a food processor, adding 3-4 tablespoons water as needed to make a smooth paste. Scrape the sides as necessary.
  3. Marinate Lamb: Toss lamb cubes with the ginger-garlic paste, 1/2 teaspoon kosher salt, and fresh ground black pepper. Cover and refrigerate for at least 30 minutes to allow flavors to infuse.
  4. Rinse and Soak Rice: Place rice in a fine mesh colander and rinse under cold water multiple times until water runs clear. Then soak rice submerged in cold water by 2 inches for 1 hour, then drain thoroughly.
  5. Prepare Curry Spice Mix: In a small bowl, combine tomato sauce, cayenne pepper, paprika, 2 teaspoons kosher salt, turmeric, and garam masala. Set aside.
  6. Caramelize Onions: Heat 3 tablespoons olive oil in a heavy Dutch oven or oven-safe pot over medium heat. Add sliced onions, season with a pinch of salt and pepper, and cook, stirring occasionally, until deeply browned and caramelized, about 15 minutes. Remove onions to a bowl and set aside.
  7. Brown Lamb: Add 2 tablespoons olive oil to the pot and heat over medium-high. Add half the marinated lamb and cook, stirring occasionally, until browned on all sides, about 5 minutes. Transfer browned lamb to the bowl with onions. Brown the remaining lamb in the same way, adding oil if necessary.
  8. Simmer Lamb Curry: Return all browned lamb and caramelized onions to the pot. Pour in the prepared tomato-spice mixture. Stir well, scraping up browned bits from the bottom. Bring to a simmer, cover, and cook gently for 25-30 minutes, or until lamb is tender. Remove from heat.
  9. Prepare Saffron Rice: While curry simmers, heat ghee or butter in a medium saucepan over medium heat. Add cumin seeds, cardamom pods, bay leaves, and cinnamon sticks, cooking until aromatic and spices sizzle (about 30 seconds). Add sliced red onion and cook, stirring often, until lightly browned (3-4 minutes).
  10. Add Saffron and Rice: Add saffron threads by rubbing them between fingers to scatter into the pot. Stir for 30 seconds until color and aroma develop. Add drained rice and toss gently to coat in spices and fat.
  11. Cook Rice: Pour in 2 cups cold water and 2 teaspoons kosher salt. Stir and bring to a boil. Lower heat and simmer uncovered for 5-6 minutes until water evaporates and rice is partially cooked. Remove from heat.
  12. Assemble Biryani: Preheat oven to 350°F (175°C). In a medium casserole dish, layer half the lamb curry, then half the saffron rice. Repeat layering with remaining lamb curry and rice.
  13. Bake Biryani: Cover casserole with a lid or double layers of foil and bake for 35-40 minutes until heated through and flavors meld.
  14. Serve: Serve the biryani hot with chilled cucumber raita on the side. Remind diners that whole spices—bay leaves, cinnamon sticks, and cardamom pods—are for flavor only and should be removed before eating.

Notes

  • Marinate the lamb longer than 30 minutes, if desired, for deeper flavor absorption.
  • Rinsing and soaking basmati rice helps achieve fluffy, separate grains in the final dish.
  • Saffron adds an authentic aroma and color but can be substituted with turmeric for color if unavailable, though flavor will differ.
  • Whole spices in the rice—cardamom, bay leaves, cinnamon, and cumin—are for flavor infusion and should be removed when serving.
  • The dish can be prepared ahead and reheated covered in the oven to maintain moisture.
  • Adjust cayenne pepper to your preferred spice level.
  • Cucumber raita provides a cooling contrast and can be made several hours ahead.
