Ingredients

Chicken and Coating

  • 1.3 lb / 600 g boneless skinless chicken thighs, diced into large bite-sized chunks
  • 1/3 cup / 50 g flour
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper

Cooking Fats

  • 1 tbsp unsalted butter
  • 1 tbsp olive oil
  • 5 tbsp / 75 g / 2.6 oz unsalted butter, diced into tablespoon chunks

Sauce

  • 1/3 cup / 110 g honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • Salt and black pepper, to taste

Instructions

  1. Prepare the chicken coating: In a medium-sized mixing bowl, combine flour, 1 tsp salt, 1/2 tsp onion powder, 1/2 tsp garlic powder, and 1/2 tsp black pepper. Add the diced chicken and toss thoroughly until each piece is fully coated in the seasoned flour mixture.
  2. Fry the chicken: Heat 1 tbsp butter and 1 tbsp olive oil in a large pan over medium-high heat. Once the butter has melted and mixed with the oil, add the coated chicken pieces spaced evenly apart. Fry until the bottom side is crispy and deep golden brown, then flip and cook the other side until it is equally crisp and lightly charred, ensuring the chicken is cooked through and piping hot in the center. Remove the chicken from the pan and reduce the heat to medium.
  3. Make the honey butter sauce: Melt the remaining 5 tbsp of diced unsalted butter into the pan. Stir in honey, apple cider vinegar, soy sauce, and season with a good pinch of salt and black pepper to taste. Keep stirring the mixture over a gentle simmer until the sauce thickens into a thin caramel-like consistency.
  4. Combine chicken and sauce: Return the cooked chicken to the pan and stir thoroughly to coat each piece evenly with the honey butter sauce. Once well coated and heated through, serve immediately and enjoy your sweet and savory honey butter chicken.

Notes

  • Use boneless, skinless chicken thighs for juicy, tender meat that crisps well.
  • Coating the chicken in flour and spices creates a flavorful and crispy crust.
  • Ensure the pan is hot enough for proper searing but not smoking to prevent burning the butter.
  • The sauce should simmer gently to thicken without burning; stir frequently for an even caramel consistency.
  • You can adjust seasoning with additional salt and pepper at the end to taste.
  • Serve this dish over rice or alongside steamed vegetables for a complete meal.
