This classic Chicken Noodle Soup recipe is a comforting and hearty homemade dish, perfect for chilly days or when you need a nourishing meal. Made with sautéed vegetables, flavorful herbs, tender rotisserie chicken, and egg noodles simmered until just tender, this soup is both easy to prepare and deliciously satisfying.

Ingredients

Soup Base

  • 1/2 Tablespoon butter
  • 2 ribs celery, diced
  • 3-4 large carrots, diced
  • 1 clove garlic, minced
  • 10 cups chicken stock or broth

Seasonings

  • 1 teaspoon salt, to taste
  • ½ teaspoon freshly ground black pepper, to taste
  • 1/8 teaspoon dried rosemary, or more to taste
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon crushed red pepper flakes
  • 1 teaspoon Better Than Bouillon chicken flavor, or chicken bouillon granules (adjust as needed)

Pasta and Protein

  • 1 batch homemade egg noodles, or 4 cups dry egg noodles, farfalle, or other bite-size pasta
  • 3 cups rotisserie chicken meat

Instructions

  1. Sauté Vegetables: In a large stock pot over medium-high heat, add butter, diced celery, and diced carrots. Sauté for about 3 minutes until they begin to soften. Add minced garlic and cook for an additional 30 seconds until fragrant.
  2. Add Broth and Seasonings: Pour in the chicken stock. Season the broth with dried rosemary, thyme, crushed red pepper flakes, salt, and pepper. Taste the broth carefully before adding more salt. Stir in Better Than Bouillon chicken flavor or chicken bouillon granules to enhance the depth of flavor as needed.
  3. Cook Noodles: Bring the broth to a boil. Add your choice of noodles—either fresh homemade egg noodles or dry store-bought pasta. Cook the noodles just until al dente, being cautious with dry noodles so they do not overcook and become mushy.
  4. Remove from Heat: Once the noodles are barely tender, remove the pot from the heat. Keep in mind that noodles will continue to cook slightly from the residual heat, so this step helps prevent them from becoming overcooked.
  5. Add Chicken: Stir in the rotisserie chicken meat. Taste the soup and adjust any seasonings as needed to suit your preference.
  6. Store Leftovers: If you have leftovers, store them in an airtight container in the refrigerator. They will stay fresh for 4-5 days depending on the freshness of the chicken used.

Notes

  • Use rotisserie chicken for a quick, flavorful protein addition without extra cooking time.
  • Adjust seasoning gradually and taste frequently to avoid over-salting the soup.
  • If using dry pasta, remove the pot from heat as soon as noodles are al dente to prevent mushiness.
  • To make homemade egg noodles, use your preferred recipe for fresh pasta dough.
  • Leftovers can be frozen but may affect noodle texture upon reheating.
