This Homemade Breakfast Burrito recipe combines crispy golden potatoes, flavorful breakfast sausage, fluffy scrambled eggs, and fresh toppings wrapped in a warm flour tortilla. Ideal for a satisfying and hearty breakfast, these burritos are finished under the broiler for a lightly toasted finish and melted cheese.

Ingredients

Potato Mixture

  • 2 large russet potatoes, peeled and grated
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon sea salt, divided
  • 4 green onions, chopped

Sausage & Eggs

  • 1 pound ground breakfast sausage
  • 6 large eggs, beaten
  • ¼ teaspoon freshly cracked black pepper

Burrito Assembly

  • 6 (10-inch) flour tortillas
  • 2 cups grated cheddar cheese
  • 2 avocados, pitted and sliced
  • ½ cup salsa
  • ¼ cup minced fresh cilantro leaves

Instructions

  1. Prepare the Potatoes: Place the grated potatoes in a cheesecloth or clean kitchen towel and squeeze firmly to remove as much moisture as possible. This step is crucial for achieving crispy potatoes.
  2. Cook the Sausage: Heat a large non-stick skillet over medium heat. Add the ground breakfast sausage and cook it thoroughly, breaking it up with a wooden spoon, until browned and no longer pink, about 5 minutes. Transfer the cooked sausage to a plate and set aside.
  3. Scramble the Eggs: Using the same skillet, pour in the beaten eggs and season with half of the sea salt and the black pepper. Stir gently with a rubber spatula to scramble the eggs until they are set but still moist, about 1 to 2 minutes. Remove the eggs from the skillet and add to the plate with the cooked sausage.
  4. Cook the Potatoes: In a second large skillet, heat the olive oil over medium-high heat. Spread the grated potatoes in an even layer and season with the remaining salt. Let cook undisturbed for 2 to 3 minutes, then flip and cook for another 2 to 3 minutes. Stir occasionally thereafter until potatoes are browned and slightly crispy. Add the chopped green onions, the cooked sausage, and the scrambled eggs to the skillet, stirring gently to combine. Remove from heat.
  5. Assemble the Burritos: Preheat the broiler to low. On each flour tortilla, place ½ cup of the sausage and egg mixture in the center. Top with about ⅓ cup of grated cheddar cheese, slices of avocado, a spoonful of salsa, and sprinkle with fresh cilantro.
  6. Roll and Broil: Fold the ends of each tortilla over the filling and roll tightly to form a burrito with the seam side down on a baking sheet. Place under the broiler and toast until the tortillas are golden and the cheese melts, about 5 to 6 minutes.
  7. Serve: Remove the burritos from the oven, cut in half, and serve immediately while warm.

Notes

  • Removing moisture from the grated potatoes is key to ensuring they get crispy and don't turn mushy.
  • You can substitute breakfast sausage with spicy chorizo for a different flavor profile.
  • For a healthier option, use whole wheat tortillas and reduced-fat cheese.
  • Broil carefully to avoid burning the tortillas.
  • These burritos can be assembled ahead of time and refrigerated before broiling.
