This hearty casserole combines seasoned beef with creamy mushroom and chicken soups, sliced potatoes, and melted cheese, creating a satisfying one-dish meal perfect for family dinners or potlucks.

Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 1 cup onion, diced
  • 1 tablespoon garlic, minced
  • 5 medium potatoes, thinly sliced

Seasonings

  • 1 teaspoon salt
  • 1 teaspoon black pepper

Dairy and Soup

  • 1 can (10.7 oz) condensed cream of mushroom soup (with or without garlic added)
  • 1 can (10.7 oz) condensed cream of chicken soup
  • 1 can (12 oz) evaporated milk
  • ½ cup milk
  • 2 cups shredded cheese

Others

  • Cooking spray

Instructions

  1. Preheat the oven and prepare the pan: Heat the oven to 375°F. Spray a 9x13 inch baking pan with cooking spray to prevent sticking.
  2. Cook the beef mixture: In a large skillet, cook the ground beef, diced onions, and minced garlic over medium heat until the beef is no longer pink. Drain excess fat. Season with salt and black pepper.
  3. Layer the casserole - first layer: Arrange a layer of thinly sliced potatoes evenly over the bottom of the prepared pan, then spread half of the cooked beef mixture over the potatoes.
  4. Mix and add creamy soup mixture: In a bowl, combine the cream of mushroom soup, cream of chicken soup, evaporated milk, and regular milk. Whisk together until smooth. Pour half of this soup mixture over the beef layer, then sprinkle half of the shredded cheese on top.
  5. Repeat layers: Repeat another layer of potatoes, the remaining beef, the rest of the soup mixture, and top with the remaining shredded cheese.
  6. Cover with foil: Tent a piece of aluminum foil over the casserole to prevent the cheese from sticking, making sure it does not touch the cheese.
  7. Bake the casserole: Bake covered in the preheated oven for 1 hour. Then remove the foil and bake uncovered for an additional 30 minutes, allowing the cheese to brown and the potatoes to cook through.
  8. Rest and serve: Remove the casserole from the oven and let it stand for 10 minutes before slicing. This resting time helps it set for easier serving.

Notes

  • Make sure to slice the potatoes uniformly thin to ensure even cooking.
  • Using a tented foil prevents the cheese from burning while baking.
  • For a richer flavor, use cheese with good melting qualities, such as cheddar or a cheese blend.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated thoroughly before serving.
  • This dish can be customized by adding vegetables like bell peppers or mushrooms to the beef mixture.
