Ingredients

Meat and Aromatics

  • 2 1/2 lb. ground chuck
  • 1 large onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced

Vegetables

  • 1 yellow bell pepper, seeded and diced
  • 1 red bell pepper, seeded and diced
  • 1 green bell pepper, seeded and diced
  • 4 carrots, peeled and sliced on the diagonal
  • 5 red potatoes, cut into chunks

Liquids & Canned Goods

  • 14 oz. can whole tomatoes
  • 3 cups beef stock or beef broth, plus more as needed
  • 3 tbsp. tomato paste

Seasonings

  • 1/2 tsp. kosher salt, more to taste
  • 1/2 tsp. black pepper, more to taste
  • 2 tsp. dried parsley flakes
  • 1/2 tsp. ground oregano
  • 1/4 tsp. cayenne pepper, more to taste

Instructions

  1. Brown the meat and aromatics: In a large pot over medium-high heat, cook the ground chuck along with the diced onion, celery, and minced garlic until the meat is browned and the vegetables are fragrant. Remove the pot from the heat and carefully drain off excess fat. Discard the fat once it cools to keep the soup healthier.
  2. Add remaining ingredients and simmer: Return the pot to the stovetop and add the whole tomatoes, beef stock or broth, diced bell peppers, sliced carrots, red potato chunks, tomato paste, salt, pepper, dried parsley, oregano, and cayenne pepper. Stir well to combine all the ingredients. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Allow the soup to simmer gently for 15 to 20 minutes until the potatoes are tender but still hold their shape, ensuring a perfect texture.
  3. Adjust seasonings and serve: After simmering, taste the soup and adjust the seasoning by adding more salt or pepper if necessary. Stir well, then ladle into bowls and serve hot for a satisfying meal.

Notes

  • For a leaner soup, choose lean ground beef or drain excess fat carefully after browning.
  • You can add other vegetables like green beans or corn for added variety.
  • If you prefer a thicker soup, mash some of the potatoes against the pot before serving.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
  • Adjust the cayenne pepper to control the level of spiciness.
