This hearty cabbage casserole combines savory ground beef, tender cabbage, and rich cheddar cheese for a comforting, satisfying meal. Slow-cooked on the stovetop then baked until bubbly and golden, this dish is perfect for family dinners and showcases robust flavors with a hint of spice.

Ingredients

Main Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef (85% lean)
  • 1 medium onion, chopped (6 ounces)
  • 2 teaspoons Diamond Crystal kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon cayenne pepper
  • 28 ounces diced tomatoes, well drained
  • 1 medium green cabbage, roughly chopped (1 pound)
  • 1 1/2 cups shredded cheddar cheese, divided (6 ounces total)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) and grease a 2-quart (7 x 11-inch) baking dish to prepare for the casserole.
  2. Brown Meat and Onions: In a large, deep skillet over medium-high heat, heat olive oil. Add ground beef, chopped onion, kosher salt, and black pepper. Cook about 5 minutes, stirring and breaking up meat with a wooden spoon until beef is browned.
  3. Add Spices: Stir in minced garlic, paprika, dried thyme, and cayenne pepper. Cook for 30 seconds while stirring to release flavors.
  4. Cook Vegetables: Add drained diced tomatoes and roughly chopped cabbage to the skillet. Cook, stirring often, until the cabbage is tender, approximately 5 minutes.
  5. Mix in Cheese: Turn off heat and stir in 1 cup of shredded cheddar cheese into the beef and cabbage mixture.
  6. Transfer to Baking Dish: Using a slotted spoon, transfer the mixture into the prepared baking dish. Evenly sprinkle the remaining 1/2 cup of shredded cheese over the top.
  7. Bake: Place the casserole uncovered into the oven and bake until bubbly and the cheese topping is browned, about 20-30 minutes.
  8. Rest and Serve: Remove from the oven and let the casserole rest for 10 minutes before serving to allow flavors to meld and the dish to set.

Notes

  • Make sure to drain the diced tomatoes well to avoid excess moisture in the casserole.
  • Adjust cayenne pepper quantity based on your preferred spice level.
  • Use sharp cheddar for a more pronounced cheese flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated thoroughly before serving.
  • If you prefer a lower fat option, substitute ground turkey for beef.
