Ingredients

Main Ingredients

  • 1 1/2 cups diced onion (180 grams)
  • 1 1/2 pounds chicken thighs
  • 3 cloves garlic, minced
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon coriander
  • 1/2 teaspoon smoked paprika
  • 1 4-ounce can green chiles
  • 2 cups diced poblano pepper (240 grams)
  • 2 15-ounce cans white beans, drained and rinsed
  • 1 15-ounce can sweet corn, drained and rinsed
  • 2 cups bone broth or chicken broth
  • 4 ounces cream cheese
  • 2 tablespoons lime juice
  • Salt and pepper, to taste

For Serving

  • Shredded cheese
  • Avocado
  • Sour cream or plain Greek yogurt
  • Tortilla chips
  • Lime wedges
  • Cilantro

Instructions

  1. Make chili. To your slow cooker, add diced onion, chicken thighs, minced garlic, cumin, chili powder, dried oregano, coriander, smoked paprika, green chiles, diced poblano peppers, white beans, sweet corn, and a sprinkle of salt and pepper. Pour bone broth over the top until the ingredients are just barely covered. Press the ingredients into the liquid if needed. Cook on low for 6-8 hours or on high for 3-4 hours.
  2. Thicken chili. Remove the chicken thighs from the slow cooker and shred them with a fork. Add cream cheese to the crockpot and stir until it becomes combined and creamy. Return the shredded chicken back to the pot, add lime juice, and adjust salt and pepper to taste. Let the chili warm through for 2-3 minutes.
  3. Enjoy! Serve the chili hot topped with your favorite garnishes such as shredded cheese, avocado slices, sour cream or plain Greek yogurt, tortilla chips, lime wedges, and fresh cilantro.

Notes

  • Use bone broth for added depth of flavor, or substitute with chicken broth if preferred.
  • For a thicker chili, let it cook longer or mash some of the beans before adding the cream cheese.
  • Adjust the spice level by adding more chili powder or using mild green chiles for less heat.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days, or frozen for up to 3 months.
  • Make sure to shred the chicken well to distribute it evenly in the chili.
