Ingredients

Cereal Base

  • 2½ cups Rice Chex Cereal (75g)
  • 2 cups High Protein Cereal (72g)

Coating

  • ½ cup Sugar Free White Chocolate Chips (56g)
  • ½ tsp Coconut Oil
  • ¼ cup + 1 Tbsp Unsweetened Almond Milk, room temperature (75ml)
  • 1 Tbsp Peanut Butter (16g)
  • ⅓ cup Vanilla Whey Protein Powder (30g)
  • ¼ cup Unflavored Whey Protein Powder (22g)

Sugar Coating

  • ⅓ oz Freeze Dried Strawberries (10g)
  • ¼ cup Zero Calorie Powdered Sugar (32g)
  • ⅓ cup Vanilla Whey Protein Powder (30g)

Topping

  • 1 oz Valentine’s M&Ms (28g)

Instructions

  1. Make Sugar Coating: In a food processor, pulse the freeze-dried strawberries until they become a fine powder. Transfer the powdered strawberries into a large gallon-size ziplock bag. Add the vanilla whey protein powder and zero calorie powdered sugar to the bag, then close and shake vigorously until all ingredients are well combined.
  2. Combine Base: In a large mixing bowl, combine the Rice Chex cereal with the high protein cereal. Stir gently to evenly mix the two cereals together.
  3. Melt Coating: In a small microwave-safe bowl, combine the sugar-free white chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until the mixture is completely smooth. Stir in the room temperature unsweetened almond milk and peanut butter until fully incorporated. Add both vanilla and unflavored whey protein powders and whisk thoroughly until the coating is smooth and creamy.
  4. Coat Cereal: Pour the white chocolate and protein coating over the cereal mixture. Using a wooden spoon, gently fold and stir the cereal until every piece is evenly coated with the creamy mixture.
  5. Sugar Dusting: Transfer the coated cereal into the ziplock bag containing the strawberry protein powder mixture. Seal the bag tightly and shake vigorously to ensure the cereal is thoroughly dusted and coated in the sugar mixture.
  6. Set: Spread the coated cereal evenly on a parchment-lined baking sheet. Place the sheet in the freezer and let it set for 15 to 20 minutes to allow the coating to firm up.
  7. Add Toppings and Serve: Once set, sprinkle the Valentine’s M&Ms over the coated cereal for a festive touch. Serve immediately or store in an airtight container until ready to enjoy.

Notes

  • Use freeze-dried strawberries to add natural color and flavor without artificial dyes.
  • Make sure the almond milk is at room temperature to prevent the white chocolate from seizing during melting.
  • You can substitute the peanut butter with almond butter for a different flavor or to accommodate allergies.
  • The snack can be stored in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
  • Shaking the cereal in the bag ensures an even coating without breaking the cereal pieces.
