Ingredients

Dry Ingredients

  • 2 cups all-purpose flour (or white whole wheat flour)
  • 1 1/2 teaspoons baking powder
  • 1 3/4 teaspoons ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Wet Ingredients

  • 1/2 cup plain Greek yogurt (at room temperature)
  • 1/2 cup applesauce
  • 1/2 cup pure maple syrup
  • 1/3 cup avocado oil
  • 2 large eggs (at room temperature)
  • 1 1/2 teaspoons vanilla extract

Additional

  • 1 cup grated Honeycrisp apple (about 1 large apple)
  • Turbinado sugar (for sprinkling on top)

Instructions

  1. Prepare Oven and Muffin Tin: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners and lightly spray them with nonstick cooking spray to prevent sticking. Set aside.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, cinnamon, baking soda, salt, nutmeg, and cloves until evenly combined. This helps distribute the leavening agents and spices uniformly.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk together the applesauce, Greek yogurt, pure maple syrup, avocado oil, eggs, and vanilla extract until smooth and well blended.
  4. Mix Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients. Gently stir the batter with a spatula until just combined. Be careful not to overmix to avoid dense muffins. Then fold in the grated Honeycrisp apple gently to distribute it through the batter.
  5. Fill Muffin Cups and Add Topping: Divide the batter evenly among the muffin cups, filling each to the top. Sprinkle turbinado sugar generously over the tops to add a crunchy, sweet finish.
  6. Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18 to 24 minutes. The muffins are done when they turn golden brown on top and spring back when lightly pressed. Alternatively, insert a toothpick into the center of a muffin; if it comes out clean, the muffins are fully baked.
  7. Cool and Serve: Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack or plate to cool for another 15 minutes before serving. Enjoy your healthy, flavorful apple muffins warm or at room temperature.

Notes

  • For a gluten-free version, substitute with a gluten-free flour blend.
  • Be sure not to overmix the batter to keep the muffins tender.
  • Using room temperature eggs and yogurt helps the ingredients combine better for a smoother batter.
  • If you prefer, you can swap avocado oil for another mild-flavored oil like canola or light olive oil.
  • Store muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
  • Fresh Honeycrisp apples are recommended for their sweetness and texture, but other apple varieties will work as well.
